Hi everyone, how's it going?
Today I'm going to be sharing with you another what I eat in a day video.
And all of these recipes, like usual, are gluten-free, they're actually, I think all
of these are grain-free, so paleo for you today, dairy-free, and refined sugar-free
as well.
I like to keep my meals very simple, as a lot of you guys know, so let's jump right
into it.
All of the meals and snacks that I am eating today.
So I'm starting off my morning with some pancakes.
These are flourless nut butter pancakes, and I have been eating so many, just different
kinds of pancake recipes that I've been creating, and I really like making them flourless, and
I do that by using nut butter.
You can do nut butter, seed butter, this is pecan butter, I've done it with sunflower
seed butter, pumpkin seed butter is really great as well, and I just mix it with a few
different ingredients.
These are my banana nut butter pancakes, and if you want the recipe for these, I've got
a free sugar-free breakfast recipes e-book that you can download in the description box
that includes six of my favorite sugar-free, gluten-free, dairy-free breakfast recipes
that I specifically love for helping me feel balanced in the morning and energized.
Definitely go get the recipe if you're looking for some more ways to balance your blood sugar,
especially in the morning, these pancakes are a great option.
Because there's no flour in them, but they've got the nut butter, they kind of have that
extra fat content, so I find that they keep me feeling fuller, and I don't even like to
eat them with sweetener.
Sometimes I like putting maple syrup on my pancakes, but I actually really enjoy just
eating them with some fresh fruit.
And then, in terms of a snack this morning, since I have blueberries on hand, I'm definitely
just munching on some blueberries.
Grapes, I've also been loving lately as a snack.
So for my lunch today, I'm making a very, very simple salad, just a very simple chicken
salad, and I have here some leftover chicken and sweet potato that I roasted in the oven
the night before with some rosemary and lemon, and I'm just going to put that leftovers onto
a bed of some spring mix, and I'm going to throw on some dried cranberries and some balsamic
vinegar, and honestly, that's it.
Sometimes I'll put olives on a salad like this, or some hemp seeds or sunflower seeds,
but I just love these types of meals.
I think they're probably some of my favorites because they're simple, they're easy to digest.
And for a snack today, so I'm going to be slicing up some veggies.
In this case, I've got some red bell pepper, and I'm going to be eating this bell pepper
with my homemade olive tapenade that I made recently.
I love having a batch of this stuff on hand.
The full recipe for this olive tapenade is on my blog, and I'm going to have that with
some bell pepper and some organic corn chips as well.
Now, usually I like to have the olive tapenade with cucumber slices, but all I had was bell
pepper today.
And yeah, makes such a great, delicious snack.
For dinner tonight also, now if you follow me on Instagram, I shared a post on how I,
even though it's the summer and it was a super hot day, I was just craving a nice beef stew.
So that's what I'm making for dinner tonight.
Also watch me do a terrible job at cutting open rutabaga.
I don't really know how to cut this open.
It's always a struggle.
So anyways, I'm just dicing up some rutabaga because I am making a rosemary rutabaga beef
stew.
Full recipe for this stew can also be found on my blog.
So I'm putting that directly into a pot.
I'm also going to chop up some carrots as well, throw those into the pot as well.
And then I'm just going to fill up the pot of water just enough to cover the vegetables
because I'm making a stew.
I don't want it to be a soup.
I want it to be thicker.
And I'm just going to let those simmer while I have, um, I cut up some top sirloin steak
and then I basically just brown that in some rosemary to get some flavors going.
And then I'll add that into the stew.
And this stew is so easy to make.
It's like 30 minutes.
It doesn't take long.
It's just a few ingredients.
During the last few minutes, I'm going to add in some, I have some frozen green beans,
so I'm just going to let those soften.
And then to thicken the stew, I'm just adding a little bit of arrowroot starch, mix in with
some water, and then that thickens up really nicely.
You can also use cornstarch.
I just often use arrowroot starch to do that.
And then I'm done.
It's good to go.
Here is my delicious stew and it's just so good.
So that is it for today's meals.
