I'm starting with my spicy fried chicken drumettes, and these are so good.
They're like the perfect little finger food.
So I've got one and a quarter pounds of chicken drumettes.
And they're basically like the little drumstick part of the wing.
So they cut the wing off and just get these little drumsticks.
And I want to start by seasoning them with a little bit of salt and pepper.
And what I'm going to do is marinate them for three hours.
We are ready to add about a cup of buttermilk.
We're going to add some cayenne and some curry powder.
We're going to start with the curry powder.
And I'm going to add two tablespoons.
The curry powder doesn't add any heat.
It just adds kind of a warmth and lots of flavor.
This is a mild curry powder.
Then a little bit of cayenne for that actual spicy heat.
So it's about one and a half teaspoons of cayenne.
Then just toss them all around with the tongs.
And make sure all of the chicken drumettes are coated in all of the spice and the buttermilk.
Put the lid on and pop them in the fridge for three hours to marinate.
So it's time to start frying up my spicy fried chicken drumettes.
Before we take these out we got to make a little bit of the breading.
And I've already got my vegetable heating and it is at 325 degrees.
So let's start making a quick breading.
Half a cup of flour and half a cup of breadcrumbs.
And we don't need any egg in this just because we have the buttermilk.
And the buttermilk will help the breading stick to the chicken.
So half a cup of plain breadcrumbs.
Then we need two teaspoons of smoked paprika.
And the paprika will give it a beautiful color but it will also give it a nice smoky flavor.
So we're done with all this and we give this a quick little whisk.
And we're ready.
So now grab the chicken drumettes.
Drip off any extra liquid from the buttermilk.
We'll put them straight into the flour and the breadcrumbs.
All right here we go.
Put the chicken right in there.
There we go.
And number three.
The chicken drumettes take about six to seven minutes to cook through
and get a nice golden crust on the outside.
Oh they look good.
Look at these.
Yeah.
You're gonna get a nice golden dark colored crust from all the curry powder and paprika and cayenne.
There we go.
Gorgeous.
Now right when they're hot what I like to do is add a little bit of salt.
So you get a nice salty crust too.
That's what you want.
Mmm boy.
Taste that curry.
And you taste that cayenne pepper.
These guys are good.
