Hello my beautiful friends, welcome back to another what I eat in a week video as a vegan
but I'm also eating gluten free this week for your viewing pleasure.
Okay, hello and welcome back to what I eat in a week, I'm really excited to share with
you some easy and delicious vegan and gluten free meal ideas in today's video.
If you're new to my channel, first of all welcome, second of all hello I'm Amanda, I've
been vegan for 7 and a half years and I really like sharing vegan recipes, easy vegan recipes
mostly.
This week I decided to also eat gluten free because I know a lot of you really like vegan
and gluten free recipes and meal ideas so hopefully this video helps you out a lot and
yeah I reckon we should just get on into it, let's stop with me talking and let's get into
the food, shall we?
Look we all knew that I couldn't start this video without having the iconic iced cacao,
if you're new to my channel I like to make iced cacao because I'm not a coffee drinker
but I really like the ritual of having something when I'm feeling ritualistic in any kind of
way so that's what I like to have, that's what I had to start the week.
I also toasted a couple of pieces of gluten free bread and topped them with some vegan
cream cheese, I also then topped them with some avocado as well as some sliced tomato,
I then put some salt and pepper on top of this as well as some hemp seeds, super delicious,
easy and fresh brekkie to start the day.
Then for lunch, speaking of fresh I made some rice paper rolls, these are one of my favourite
lunches to make when I'm working from home and I just want something that's pretty easy
to make but keeps me feeling nice and full and fresh of course, so I made these with
some tofu in and some carrot, cucumber, coriander and then I also made a peanut dipping sauce
which was super delicious.
Then when it came to the afternoon I was in the mood for a little sweetie treatie, so
I had one of these butter caramel pecan chocolates which are my favourite chocolates of all time,
they're literally the best thing I've ever eaten in my life, not to be dramatic.
Then when it came to dinner time I was cooking for myself and two friends and I decided to
make a chickpea curry, I just used some Massaman curry paste and then I added in some red onion,
you know I'm an onion girly these days which is great for me, I also added in some broccoli
followed by chickpeas and then continued frying this all up together, then I added in some
water, followed it with some coconut cream of course and then added in some peanut butter,
loving peanut butter in a curry lately, so good, added in a little bit of sugar, mixed
this all together and then put the lid on to let it get going.
Once it was almost done I added in some green peas as well, continued cooking that for a
few minutes and then our curry was all done, served this with some rice, some Greek yoghurt,
vegan Greek yoghurt of course, some cucumber and some crushed peanuts.
On Tuesday morning I went to my local, got myself a macadamia hot chocolate to start the day,
in my cute new keep cup which I'm loving, finally found the perfect keep cup, isn't that a great
feeling? Then I had some of these gluten-free sourdough buns that I found at the health food
store, so decided to toast these up and then sliced up a tomato, tomatoes are so juicy and
delicious at the moment, loving it, very very grateful for that, so onto these sourdough
buns I put some avocado of course, how basic do I want to be for breakfast this video,
I don't know, topped it with some sliced tomato as well as some vegan feta, salt and pepper,
super yum, fresh, delicious, all the good things, also simple and quick which you know I love.
Okay, when it came to lunch I recently got a, I think this is called a julienne peeler,
please excuse me if I'm wrong, but I am loving it so much and I love it for making a soba noodle
salad because I peel the carrot and the cucumber, add in some cooked soba noodles as well as sesame
oil and then I make this really delicious tahini sauce, I'm such a tahini girly lately,
I'm also a saying girly a lot girly, if that wasn't obvious, I added in some crushed peanuts
and some hemp seeds as well, again super simple, fresh lunch, definitely recommend giving this one
a go. On Tuesday night my boyfriend and I had a cooking together date and we felt like having
vegan bangers and mash and he made this really really delicious homemade vegan gravy, it was
literally so unbelievably good, wow, so yeah I had some green beans, broccoli, vegan sausages,
mashed potato and gravy on top and it was a really iconic delicious time, definitely recommend
making this for yourself soon, it's like such a comforting delicious meal. Okay before we get into
Wednesday, hello it is me again and I am here to thank my friends at Squarespace for sponsoring
today's video, if you are a small business owner you might be able to relate to this feeling
but something that I have really really struggled with is trying to find time to set up a website
like amongst all the other things to do and all the other hats that I wear, a website was something
that I was like honestly dreading setting up for so long because I was like how am I gonna find
time to do this, it seems so complex and then Squarespace came along and made my life honestly
so much easier, I genuinely love and am a customer of Squarespace myself, Squarespace is basically
like the all-in-one platform to host and design your own website, they have a whole heap of
templates that you can use which are really great if you're someone like me who's a beginner to this
kind of stuff and as well as that I personally love the blogging features and how easy they are
to use and also that they have a commerce kind of back end where you can see all of your orders
coming in for products or services that you are selling as well, so I definitely recommend
Squarespace if you are looking to host and design your own website, you can actually head to
squarespace.com for a free trial and when you're ready to launch your website you can go to
squarespace.com forward slash amandadux, use my code which is amandadux and that gets you 10%
off your first purchase of a website or a domain, okay let's get back into the food, let's jump back
into Wednesday, on Wednesday morning I went for a little coffee and cake moment with my friend,
it was really good, this cafe that I went to had a gluten-free vegan strawberry pistachio muffin
which was iconic and then I also had an almond hot chocolate of course, then when I got home I got
back into these sourdough buns because they're so good and this time I got some of this vegan feta
and instead of like crumbling it on top I spread it on top kind of like a cream cheese,
added on some cherry tomatoes as well as some sprouts and some salt and some pepper, again
keeping it very very simple and this was a really really nice way to start the day, a bit of a random
day of eating but at 2 p.m I got some of my favorite chocolate at the moment, I know I just
said the butter caramel pecan was my favorite chocolate but like this is one that I'm loving
in particular at the moment, it is so good and then when it came to dinner time I was once again
cooking for myself and two friends and I decided to make these fresh tofu bowls, so into here I
made a coleslaw with some spinach, some cabbage and some carrot as well as some vegan kewpie mayo,
I also fried up some sweet chili tofu nuggets which was so good and made these really yummy
rice bowls, so they had rice with sesame seeds, the tofu, cucumber, slaw, avocado and some more
vegan kewpie mayo, it was really really good, then when it came to Thursday morning I made
some chickpea pancakes, well like one large chickpea pancake, one of my favorite higher
protein vegan and gluten-free breakfasts to make and I topped it with some crispy kale
as well as some barbecue sauce and it was really yummy, if you haven't tried making chickpea
omelets or chickpea pancakes yet I definitely recommend doing so, honestly they've been such
a huge breakfast game changer for me, I was having a pretty hectic work day this day and so I ordered
myself a salad from this salad bar on the Gold Coast that I really like, this was a creamy vegan
potato salad with green beans and peas and yeah it was super delish, love when other people cook for
me and then for dinner I was cooking dinner for myself and for my roommate, I made some crispy
potatoes as well as some greens and beans, I was very inspired for my Tuesday night dinner,
I cooked her some vegan sausages and I had these vegan gluten-free veggie patties which was really
really good, I'd never had this brand before but I really liked it, topped it with some barbecue sauce
and yeah very simple dinner but I'm just leaning into the simplicity of food lately and it's really
really nice, on Friday morning I decided to make some buckwheat blueberry pancakes once again for
my roommate and I and these turned out super well, I'm going to link the recipe that I based
what I did off because it worked super well so if you're interested in making
some gluten-free pancakes I definitely recommend doing this, so I had three pancakes with some
sugar and butter on, they were really nice and fluffy, I love having blueberries in pancakes
as well because I love the way they get all melty and delicious, when it came to lunch time I had
some pumpkin in the fridge that I needed to use up so I decided to make myself some simple pumpkin
tacos, I started by roasting some pumpkin just in some salt pepper and some oil, I put this in the
oven for like 30 to 40 minutes, whilst it was roasting I got everything else prepared and so
I had a few tacos, these are a white corn tortilla, I put some avocado cucumber and red onion on
followed by the pumpkin and some sprouts, super simple tacos really fresh and delicious which we
love to see and I love to eat personally, apparently I was cooking for other people a lot
this week because once again I'm cooking for myself and a couple of friends tonight so I decided to
make something similar to the sushi bowls that I had made earlier in the week, made it a little bit
differently though so I had some rice with some carrot cucumber some crispy tofu avocado and some
edamame topped with some spring onions and some sesame seeds as well as teriyaki sauce, super
delicious, okay so these are the corn tortillas that I really like you can just get them from
Woolies or Coles here in Australia and I was using them this morning to make breakfast tostadas
which I am just loving so much and as well as that my boyfriend had left some leftover tofu
scramble at my house and his tofu scramble is the best tofu scramble ever not to be dramatic
so I decided to have some of this on the tostadas today so I just smashed some avocado on and then
I topped with the leftover tofu scramble I'm gonna do a recipe for this soon because I used
to hate tofu scramble and this has been a game changer for me I then had some cherry tomatoes
as well as some lime super delicious lovely way to start the day then at lunchtime I decided to
make a kale pesto I started with some walnuts as well as pumpkin seeds then I added in some
nutritional yeast as well as garlic powder and some onion powder once again I'm going to do a
recipe for this soon because it was really really good I added some veggie stock some basil as well
as some kale olive oil and then I also added in some lemon juice of course I feel like it makes
it so good then I added in some salt and some pepper and I blended this all together making
a couple of little tweaks along the way but we get this really vibrant delicious green kale pesto
so I made this to have with some of this gnocchi that I get from the supermarket and then I also
fried up some chickpeas to have with this as well just for a little bit of protein added to the dish
so yeah I put some gnocchi into a bowl added in some of this kale pesto tossed it all together
and then I transferred it into a fresh bowl I know you guys think that that is really weird
like a bizarre thing to do um but it's really really good to eat out of a bowl like that and
also I make videos on the internet about food so it's gonna look good in some way you know
anyway added tomatoes chickpeas it was really really good okay when it comes to dinner time
I was cooking for myself and my roommate so I decided to make these taco bowls that I had been
craving all week I had some brown rice as well as some black bean mix and some fresh pico de gallo
that I had made added some charred corn as well as some tortilla chips that I had made had some
avocado coriander and a creamy vegan cheesy sauce so good wow I'm really feeling like that
right now when I was at the supermarket this week I found this quinoa porridge and I was so curious
to try it spoiler alert I really liked it and I definitely recommend trying it so I just put some
into a saucepan over the heat with some soy milk and just cooked basically as you would cook
oats if you're making oats for breakfast super simple and then I transferred all of this into a
bowl and it's time to get into the toppings so I topped with a little bit of coconut sugar as well
as some soy strawberry yogurt then I added on some fresh banana as well as fresh strawberries
I also added on some passion fruit pulp and this was my yummy sweet breakfast on Sunday
then when it came to lunchtime I was really in the mood for satay of some description
and had this vision to make like a satay noodle soup and it actually turned out so well so I added
in some curry powder oil and some garlic into the pan mix this together added in some water as well
as some coconut milk mix that added in some peanut butter tamari veggie stock continued mixing added
in some coconut sugar because I had forgotten to add in any kind of sweetener and then whilst that
was all getting all flavorful and delicious and hot I boiled sorry not boiled fried some broccoli
and some beans once they were nice and crispy added them to the soup as well as some cooked
rice noodles and just kept this going for another couple of minutes over the heat and then transferred
into a bowl topped with some crispy shallots it was so amazing and then to end the week I had a
super lazy dinner I fried up another veggie patty that I had as well as some more of the leftover
tofu scramble that I had and then I literally just had a piece of toast with some vegan butter on it
I then added on some of the kale pesto then I added on my veggie patty that I had just fried up
as well as the tofu scramble of course I topped my veggie patty with some barbecue sauce and this
was a delicious simple easy way to end the week. Alrighty my beautiful friends that brings us to
the end of today's video really hope you enjoyed this what I eat in a week if you're new to my
channel don't forget to subscribe and I will see you very soon for another one. Bye!
