Cheese is one of the oldest and beloved foods around the world. It was invented as early as 8000 BCE by Neolithic farmers. The ancient farmers harvested for milk and after leaving milk in warm conditions for several hours they found yellowish globs could be eaten fresh as a soft, spreadable meal. This is the beginning of the cheese making legacy. By the end of the Bronze Age, cheese was a standard commodity in maritime trade and cheese began to spread around the globe. Some food cultures rejected cheese but many more embraced cheese and quickly added their local flavors.
Nowadays, the world produces roughly 22 billion kilograms of cheese per year, shipped and consumed around the globe. But 10,000 years after its invention, local farms are still following in the footsteps of Neolithic farmers, hand crafting one of the most favorite foods of humanity.
