Coconut macaroons are the most coconut-y of all cookies. Loaded with almost all coconut, these chewy, tender coconut bites will leave you in tropical, coconutty heaven. They are delicious by themselves but even more irresistible when dipped in dark chocolate. The recipe is vegan (dairy-free, egg-free), grain-free (gluten-free), soy-free, nut-free, and refined sugar-free.

Hi everyone! In today's video I'm going to show you how to make raw coconut macaroons.
The first ingredient is desiccated coconut, sometimes also called finely shredded coconut.
The next ingredient is almond flour. I typically use super fine almond flour
and don't sift it, but this time I only had regular almond flour.
Next is coconut butter. I have a recipe for coconut butter on the blog, I'll leave a link to it in the description box below,
but you can use store-bought coconut butter as well. It doesn't matter, just make sure you warm up the
coconut butter a little bit before adding it to the dry ingredients so it has a liquid consistency.
Maple syrup and finally vanilla extract. Mix until well combined. The mixture should be
thick, moist and stick together when you press it between your fingers. If the mixture is too dry,
add a little bit more coconut butter. If it's too wet, add a little bit more desiccated coconut.
Fill a two tablespoon cookie scoop with the mixture and release it onto a plate.
Now if you'd like, you can dip the macaroons into melted chocolate. It's best to transfer
the macaroons into the fridge or the freezer first, so they firm up and are nice and cold.
When you dip the cold macaroons into the melted chocolate, the chocolate sets almost right away.
And that's it! Raw coconut macaroons. These raw macaroons are one of the first raw desserts I
ever made and I still love them and make them to this day. So what do you think?
They are surprisingly buttery, which is what you're going for. So the buttery flavor is the
most noticeable to start. Then the sweetness from the chocolate. Maybe a little bit of vanilla
in there. So there's that salty savory sweetness combo. It's really good. The texture, I would
prefer if these were... I like them better when they're right out of the freezer. I like the
texture and it's fun to bite through. And then once it warms up on the palate, you can definitely
get that slow crunch, just that texture from the coconut. So I really like that. They're really
tasty. All right, so I hope you enjoyed this video. If you did, please give me a thumbs up,
