店主の山元克之さんは祖母がかつてうどん屋を営んだ場所で、2006年に店を構えた。
そんな山元さんの朝の仕込みに密着。

牛と土ゴボウのつけ麺は、コシのあるモチモチとした太麺の食感を存分に楽しめる一品。
大きなお揚げにたっぷりダシが染み込むきつねうどんは細麺で、
つるりとした口当たりが心地よい。
肉味噌うどんは、ピリ辛の肉味噌がアクセントとなりクセになる味。
どれも麺の歯応えやダシの力強い風味が印象的で、一度食べたら忘れられない味わいだ。
