Hey guys, it's Dani and today I am putting a fun, delicious, nutritious twist on a classic dessert.
For this quick bite, I'm showing you how to make my clean and delicious,
gluten-free, double chocolate brownies made with avocado and banana.
Now, just to be clear, you're not actually going to taste the avocado. The job of the avocado
is to replace the butter in a brownie. This way we could lighten the recipe up a little bit, right?
I have absolutely nothing against butter, but check this out.
A half a cup of butter has 813 calories. A half a cup of mashed avocado is 184 calories.
So swapping the butter for the avocado is a super simple way to lighten these up,
plus work some of those healthy fats into our diet.
So I've got my oven preheating at 350 degrees and I have lightly greased an 8x8 baking dish
with a little bit of coconut oil. Now you could also do a little bit of butter or
some cooking spray here. Just use what you've got.
Then into my food processor, you could also do this in a blender,
goes one large roughly chopped avocado, a half a cup of mashed banana,
half a cup of a real maple syrup, and a teaspoon of vanilla extract.
Then I'm just going to pulse that a few times until it's all blended together
and it's nice and rich and creamy. Now, just a little FYI, guys,
you will taste the flavor of the banana in these brownies, which I personally really like,
but if you're not a banana fan, just swap out the mashed banana with a half a cup of applesauce
and your problem is solved. So next I'm going to add in three eggs,
give that a quick whisk, mix it all together. Then goes a half a cup of coconut flour.
And if you guys need to learn more about coconut flour, be sure to check out my coconut flour 101.
I cover all the details there. A half a cup of unsweetened cocoa powder,
a quarter teaspoon of salt, and a teaspoon of baking soda.
Then I'm just going to stir this until everything comes together and it's all combined
and then transferred into my baking dish. Smooth out the top.
And then to finish this off and make these brownies double chocolate,
I sprinkle a third of a cup of chocolate chips right over the top.
I prefer to put them on top than to mix them in because number one, it looks really pretty,
and number two, you get just the right amount of extra chocolate in each bite.
Then I'm just going to pop this in the oven for 25 minutes or until it is set up in the middle
and then I let it cool completely, the hardest part, before cutting.
Now you can cut them as big or as small as you like. Personally, I like nine hearty brownies.
Guys, I am telling you, the combination of avocado and coconut flour keep these brownies
really light and moist and the flavor is chocolate, chocolate, chocolate with just
a little kiss of banana. I like making these when I'm doing my weekend meal prep and then I know
that I have this delicious nutritious sweet treat that I could toss into my kids' lunch boxes
or enjoy myself in the afternoon with a cup of coffee.
