Hey that's Jeff and she's Angela and we're Pure Detour. In 2021 mid-covid pandemic we had a
midlife crisis so we quit our jobs, sold everything we own, and left Canada to travel the world full
time. Right now we're exploring cities throughout northern Morocco such as Fez, Macniz, Kenitra,
Rabat, and Casablanca. And today we are once again doing my favorite activity, food tour!
Hey our new friend Fatima from Morocco Food Tours is going to take us to eat some of the best of Fez.
So that's normally the yellow semolina, okay, and we call it actually hash oil and some salt,
a little bit of sugar, and just a little bit of yeast. Then we let it like rest for 40 minutes
and after that we just fry it in here. So the first one we call it Mlawi,
in another places in Morocco or in another cities they call them Semen. It's a flour with a little
bit of salt and olive oil. That's the white semolina, it's actually the healthiest one,
okay, that's the yellow semolina, the Harsha, okay, that's the one she showed us already,
and with some cheese inside, okay.
I'm okay with all the cheese all the time.
Oh my god that's awesome, that is amazing. Oh that's not what I expected at all. No,
I was expecting like just an almond milk but it's got so much going on with it. Did you say
orange blossom? Yeah. Do you think that that's that what that flavor is? I mean I've never had
anything like that, it's so good. That is amazing.
Thank you. So back behind us here was our first stop on our food tour with Fatima and there is
no name of this restaurant. It's right as you come through the main Meghina gates,
you will see it right on the left hand side, it's fantastic.
It's delicious and you really taste the freshness of the cheese. As you said,
this one is handmade and you can really taste that and then the cheese and the honey together,
they go so nicely in the nice puffy pancake. Okay, let's give it a go.
I feel like I have food all over my mouth right now and I don't even care. This is amazing. It's
so fresh, the honey sets it off. So the little sweet shop right next door to where Fatima brought
us has dropped this on the tray as well so let's give you this to try. This is the gentleman back
here. We have to eat with the horse coming around us. Amazing. We've seen these all over the place
and we've yet to try one of them. I'm going to leave the rest of this for Angela to try
because it's delicious. Here it goes. You know what that reminds me of almost,
like a funnel cake, kind of, but like a little crispier. Soaked in like a simple syrup or
something. I really like that. We should be buying these all along. We've been missing out.
So here's another one he just gave us here. Let's give this one a go.
It's delicious. That's the black olive, soaked in salt, preserved lemon. I love the preserved lemon.
That's the mislela. It's the female one actually and it's with parsley, lemon, zaatar, and garlic.
So this is only preserved in lemon. That's with parsley and lemon. That's with like chili, harissa,
okay, and some parsley. That's all. Can I grab one? I'll get you one.
I love these oil cured ones. This is so good. We like spicy.
You first? You go first. Me first. Spicy one.
Dates with walnut. Yeah. It's very, very famous for our wedding. Thank you.
I love dates so much. Very good dates. That's so delicious. That's spectacular. Yeah, very good.
So good. There you go. Some walnut here. Thank you Fatima. There you go.
We cook it for like five or six hours. Depends. Then you can get one with fat,
one with oil. Okay. That's cow meat. That's what we call it Lakhliya in Morocco. Lakhliya. Lakhliya.
Yeah. It's dried meat and normally it's a typical breakfast in Fez.
Okay. Yes. We hit it up with eggs in the morning. Beautiful. But you can keep it
for three months or six months like this.
That is so good. That is awesome. Yep. Very similar. Yeah.
I am sure a lot of people would want to use this for breakfast as well. For sure, yeah.
All right. As we're walking through here at the Medina of Fez, I have to say that I am
so happy that we decided to get a tour guide for this and Fatima has been amazing. Extraordinary.
We are on this dumb luck run of just finding amazing people to show us around the cities of
Morocco. Majoub in the desert and the Atlas Mountains. Now Fatima here in Fez, she is amazing.
Depends what we call it.
I love this. It's like a savory little like deep fried fritter. That's good. That's crazy.
Delicious. I love beans.
Has a lot more heat than I thought it would.
The dried fava beans. Then we take off the skin, the brown skin, and after that we boil it with
garlic and some olive oil, a little bit of cumin, and that's all. Of course, water. Then after
it gets cooked, we smash it. This is a traditional way how they do it normally.
Now Moroccans do it more modern, but he's using the traditional way. And after that, we eat it
or drink it as a soup for breakfast. We get it as a soup. If it's thicker, we get it for lunch,
okay, as a dish. What's the name of it again? Bissara. Bissara? Bissara. Yeah. Fava bean soup.
We're going to try this with nothing on it right now. It's just the
soup with the olive oil on top of it. Let's go.
I love the olive oil. I love the olive oil, Harry. It's delicious. It's so good. It's
fantastic. Now we're going to go into a little bit of chili, some cumin. We have a little bit
of cumin. Add a little bit of cumin. You add a little bit of chili to it. It changes the flavors
up quite a bit. The complexity becomes much more. Yeah. It's really, really nice. Give it a go,
baby. Thank you. Oh, wow. Yeah, you're right. It does add another layer to it. It makes everything
delicious.
We may have just found our favorite stop on this food tour so far. It looks so simple. Okay,
maybe that's what is perfect about it, right? I know Jeff is probably thinking about ordering
another bowl right now. So good. He loves it. Perfectly delicious food. Which one did you try?
Tell me now with all this in your mouth. That was the beef and it was delicious. The tomato
sauce is actually very subtle. It gives it a nice little touch, a nice little appetizer when you're
eating. I've got a chicken wing. I love that. Very crispy on the outside, juicy on the inside.
So as you can see back there, I'm the one that obviously likes all the barbecue and the grilled
meats because I'm pretty sure I ate everything there. So we're in the community oven. It's one
from the oldest ovens in the Medina. It's more than 400 years. It's for baking the bread,
or we call it, well, chups, or the bread in English. So people or the families bring their
dough and the baked eggs come back for it later. Also, some people bring the tagine.
Some people bring some cookies. That is pretty amazing.
Sesame. I'm going to try the sesame one first because I love sesame sweet.
So it's got the nuttiness of the sesame, but also super sweet, really chewy. That is amazing.
Home and sesame peanut.
Oh, pistachio too. Pistachio is my favorite. I tasted it right away. More old than he is.
Oh, that's awesome. So Fatima has fed us so much here. I'm a little bit worried about where she
may be taking us next. Okay, we're starting with this gorgeous natural yogurt that this gentleman
makes here in the shop. And you can see it's just so thick and creamy and I love yogurt. So
let's give that a shot. Oh, wow. That's fantastic. Yeah, you can stop filming me. I'm gonna eat it
all. All right. So this shop seems to specialize in a lot of dairy products. This is whey,
like W-H-E-Y, whey, which I've actually never tried before in my life. So I'm going to give
this a shot. That's not bad. Like I don't know if I'd want to drink like
glass after glass of it, but I was expecting it to be more
soury. Maybe more soury. No, that's not bad. I've had whey before. I did not like it. So
let's give it a try here in Morocco.
Yeah, that's that. It's exactly like I remember it. Not a fan of whey. Let's eat this big piece
of cheese. It's creamy. It's much softer than I expected. I thought it would be a little bit more
like crumbly and firm. Very soft cheese. It's really good. Super creamy. A little bit of
tartness in it, like similar to yogurt, that little bit of sourness. That's really good.
Okay, make sure I'm pronouncing this right. Milfit. It's a French pastry. Let's give it a go.
Yeah, you guys know I love my sweets. It's one of the best things I've ever eaten in my life.
So we're wrapping up this food tour here. Thank goodness, almost, because I'm so full. You guys
have seen us do how many food tours now, but I've probably never been this full in my entire life.
So big shout out to the amazing people at Moroccan Food Tours as well as Fatima. We're
going to leave her Instagram as well as the website link to Moroccan Food Tours
down below. So please don't forget to like and subscribe to see what happens next. Bye.
Thank you.
