Hey guys, I'm Dani Spees and I've got a dessert for you today that's going to knock your socks off.
I'm making my no-bake sweet potato pie.
And here's all you'll need.
Two sweet potatoes, peeled and cubed.
Two tablespoons of butter. I'm using Earth Balance.
A quarter cup of grade B maple syrup.
Two teaspoons of cinnamon.
A half a teaspoon of nutmeg.
A pinch of salt.
A half a cup of crunchy cereal nuggets.
Think something like grape nuts.
And a quarter cup of chopped pecans.
The only cooking involved with this recipe is steaming up your sweet potatoes.
So I've got two sweet potatoes ready to go.
And I'm just going to drop them right into my steamer basket.
And let them go for about eight to ten minutes or until they're nice and tender.
Steaming is a really quick and simple cooking technique.
And it doesn't mean that you have to be stuck eating boring, bland veggies.
You can cook up your vegetables first and then season them later.
So for example, if I wasn't turning this into sweet potato pie,
I can mix these sweet potatoes with rosemary and chopped garlic.
A little bit of olive oil, salt and pepper.
Delicious.
Now while our potatoes are working, we're going to make the topping.
It couldn't be any easier.
All you have to do is combine these three ingredients.
Your chopped pecans.
The crunchy cereal.
And half of the cinnamon, so a teaspoon.
Then just use your fingers and bring them all together.
And when it's all combined, your topping is ready to go.
So it's been about ten minutes and our potatoes are ready to go.
As you can see, they're nice and tender.
Squishes right in half.
So I'll just scoop them into my bowl and get ready for the fun part.
Mmm, so good.
Now this is the fun part.
Take your fork and you're going to start mashing your potatoes up against the side of the bowl.
Just keep working them until most of the chunks are gone.
Alright, looking good.
Now we're going to add in our butter.
Maple syrup.
The nutmeg.
And the rest of our cinnamon.
Then we're just going to bring that all together.
And you want to work fairly quickly because you want the potatoes to stay hot until the butter melts.
Now last but not least, a pinch of salt.
This is going to bring out all the flavors.
Smells so good.
I'm telling you guys, this stuff should be illegal.
Now here's how you're going to serve it up.
Take a big scoop of the sweet potato filling.
Put that right into your serving bowl.
Then top that with the crumb mixture.
The cereal and the pecans.
Mmm, that's like the crust.
Then optional here, I've got a little whipped cream.
A dollop of that right on top.
Yum.
And a sprinkle of cinnamon.
Wow, that is gorgeous.
So the next time you think you don't have time for a decadent, sinless dessert, try my no-bake sweet potato pie.
I'm telling you guys, it'll have you searching for your socks.
Get it?
Knock your socks off.
I'm Dani Spees, and I'll see you next time.
