Hey guys, it's Dani.
Now both of my kids love ordering Chinese food, so I decided instead of doing all that
ordering in, I would come up with a recipe of my own.
For this quick bite, I'm showing you how to make my clean and delicious black bean sesame
noodles with edamame.
So I've got a nice big pot of water coming to a boil back on the stove, and over here
we are going to get started on our dressing.
Very easy to do.
All you're going to do is combine a quarter cup of all-natural peanut butter.
All it should say under the ingredients is peanuts and salt.
Done.
One tablespoon of fresh grated ginger, two cloves of crushed garlic, then we've got a
quarter cup of low-sodium soy sauce, one tablespoon of toasted sesame oil.
Just takes a little bit for big flavor with that.
Two tablespoons of rice vinegar, and then we're going to round that all out with one
tablespoon of honey.
Then you're going to grab your fork, mix everything together until you've got everything well
incorporated.
Now this simple dressing is going to bring huge flavor and be the base of this dish.
Then while your water is boiling, you just want to get the rest of your veggies prepped
up as well.
All you're going to need is one bell pepper, sliced up nice and thin.
I chose orange because it's my son's favorite color.
One cup of cooked edamame, right, those are the soybeans.
When you're buying edamame, you want to make sure that you're getting organic, non-GMO
edamame, and you want to have the international quality assurance seal on the bag.
A handful of fresh chopped scallions, and then finally, and this is optional because
I know people either love it or hate it, I love it, fresh chopped cilantro.
Once you've got your water at a boil, you are ready for your noodles.
Now guys, I've got to tell you, I recently discovered these organic black bean spaghetti
noodles from Explore Asian, and I think I'm in love.
I've got to tell you guys, the only ingredients that are listed are organic black beans and
water.
They are non-GMO, vegan, organic, and gluten-free, plus they've got 25 grams of protein and 12
grams of fiber per serving.
That is a pretty serious nutritional profile for a noodle.
So we're going to get them into the pot, give them a stir, and then set your timer for four
minutes.
Now the package says that they need to cook between seven and eight minutes, but personally
guys I find them to be perfectly al dente at just four minutes.
Now here's how you bring it all together.
You're going to toss the hot noodles right on top of your dressing.
That's going to warm the dressing a bit and make them really easy to mix up.
And then top that with your peppers, edamame, chopped up scallions, and the cilantro.
Then just grab a pair of tongs and gently start to toss that all together.
You want all the ingredients to be lightly coated in that delicious sauce.
Now these noodles are really ideal if you're a vegan or a vegetarian, because you could
use them in any noodle dish that you love, and you're going to get a ton of protein without
the meat.
Also good for meatless Mondays.
Then once you've got it all mixed together, you're just going to get it onto your favorite
serving dish.
Now you're ready to taste it.
Now personally, right before I serve it, I love to just give it a sprinkle of sesame
seeds and a little sprinkle of red hot pepper flakes.
For me.
The kids, not so much.
Mmm!
You get the ginger and the garlic with that sesame, peanut-y dressing.
The next time you're thinking about ordering in, you need to give this dish a try.
Thanks so much for watching, guys.
I'm Dannie Spees, and I will see you next time with some more clean and deliciousness.
That is a home run.
Dang.
