Hello, my friends, it's Dani,
and today I am sharing one of my very favorite
go-to family dinner ideas.
It is a slow-cooked shredded barbecue chicken sandwich
with a creamy coleslaw over the top.
It's extremely easy to make.
I mean, like super duper easy,
and it's absolutely delicious.
And would you believe that it uses just six ingredients,
not including the salt and pepper?
Thank you to my friends at Primal Kitchen
for sponsoring this video.
I could not make this recipe
without their classic barbecue sauce and their mayo,
which is real mayonnaise made with avocado oil.
Personally, I super appreciate
that they focus on delicious high-quality ingredients,
because as you know,
that is something that I really value
in my own kitchen as well.
And whenever anybody asks me
how they can level up their eating,
the first thing I always recommend
is to focus on high-quality ingredients.
So thank you to Primal Kitchen
for making that easy for us to do.
Now, this is the perfect meal for busy summer days,
because you can do most of the preparation in the morning.
So whether you are at the pool,
if you're working all day,
if you're driving your kids to and from camps and activities,
you can know that when you get home,
you will have a delicious, wholesome meal waiting for you.
And honestly, this is exactly the type of recipe
that keeps us from ordering pizza four nights a week.
So the first thing I'm gonna do is prepare my chicken,
which is ridiculously easy to do.
It requires just two ingredients.
I have two pounds of boneless, skinless chicken breasts
and one and a half cups of barbecue sauce.
Now, I do like to just look over the chicken
before I get it in my slow cooker.
And if I see any little bits of excess fat
around the edges like this, I just trim them off.
Then I take the chicken breasts
and I lay them in a single layer
on the bottom of my slow cooker.
You want to try to keep them in a single layer.
You don't want them piled on top of one another.
This way, you know that they're gonna cook nice and evenly.
Then I'm gonna pour one and a half cups
of the Primal Kitchen Classic Barbecue Sauce
right over the top,
making sure that all of the chicken
is covered with the barbecue sauce.
Now, I love that the Classic Barbecue Sauce is unsweetened,
so it has no added sugars.
And it has only two grams of sugar per serving,
which if you are familiar,
a lot of traditional barbecue sauces
can have upwards of 12 grams of sugar per serving.
So if you're looking for something
that has a great, sweet, smoky, tangy flavor
and not a ton of sugar,
this barbecue sauce is gonna be your new best friend.
And I think it's worth noting
that all of the Primal Kitchen products,
their sauces, their condiments,
their salad dressings, collagen, mayo,
they all have no added sugar, no dairy,
and no artificial sweeteners.
Once I have the chicken and the barbecue sauce
all set up in my slow cooker,
I'm just gonna pop on the lid.
And then you can either cook this on high
for three to four hours,
or you can cook it on low for six to seven hours,
depending on your schedule and the timing that you need.
Now, the other thing that I like to make
once the chicken is set up is the coleslaw.
And I usually do this in the morning
so that when I come home,
pretty much everything is ready to go.
And coleslaw, I have found that the simpler you keep it,
the more delicious it is.
So if you're looking for a shortcut method,
you could, of course,
buy some pre-cut coleslaw at the grocery store.
And all that means is that the cabbage
and maybe some carrots
are already shredded up and ready to go.
So all you have to do is open your bag
and transfer it into your bowl,
which is something I do very often.
But if you didn't have that,
the alternative would be to buy a small head of cabbage,
slice it in half,
bring your knife down on a diagonal
so you can pop that core right out,
then lay it flat side down,
slice it in half again,
then go back the other way
and just create nice, thin slices.
And then if they're kind of long like mine are,
I like to come across again and just slice it in half
so that the pieces aren't too big when you're eating.
And you'll see, you can just shred this right apart
and this is perfect for coleslaw.
If you wanted to add a little pop of color to your coleslaw
and a little more sweetness,
you could take a carrot and a potato peeler
and just shred small pieces of the carrot
right into the cabbage and boom,
you've just created a homemade coleslaw base.
Now for all of the flavor,
what I like to do is I add one fat clove of crushed garlic.
Then I have a half a cup of the Primal Kitchen mayonnaise
that is made with avocado oil,
which is a heart-healthy plant-based oil,
half a teaspoon of salt
along with a quarter teaspoon of black pepper,
and then totally optional, but absolutely delicious,
a nice big handful of fresh chopped cilantro.
I know some people don't like cilantro.
People tend to love it or hate it.
If you don't like it, you could do parsley.
And if you didn't want to bother with either,
your coleslaw, I promise, will still be delicious.
Gently mix this all together.
I like to do this with tongs
and just kind of rotate it throughout the bowl.
And then once you have a nice light coating of that mayo
all over all of your cabbage,
your coleslaw is ready to go.
Usually what I do is I will transfer this
into an airtight container,
and then I just let this stay in the fridge
so that it's ready to go at dinner time.
Once you're home and you're ready to eat
and your chicken is cooked through,
you're gonna gently remove each chicken breast
from the slow cooker.
And then using two forks,
you're just gonna simply shred it apart.
And you're gonna see that this happens very easily.
And once you've got it all shredded,
I like to take it, place it back into the slow cooker
just to make sure that it is fully coated
each and every bite in that delicious barbecue sauce.
When you're ready to build your sandwich,
just grab your favorite whole grain roll,
pile on the shredded barbecue chicken,
and then layer some of that creamy coleslaw
right over the top.
And you, my friend, are ready to enjoy.
So simple, so delicious, and literally comes together
in just minutes after a busy day.
This meal is tasty enough to serve at a barbecue
or a cookout, and it's easy enough to make
for the busiest of busy days,
and I cannot wait for you to give it a try.
Mm, mm, mm.
I love how the sweet and tangy barbecue sauce
pairs with that cool, creamy coleslaw.
It is such a good combination.
That is delightful.
