Hi everyone, I'm Priyanka and you're welcome to The Terrace Kitchen.
In today's video, I'm going to show you a delicious recipe of Cheese Pav Bhaji Fondue.
Let's get started.
For this recipe, we need soaked dried green peas.
The quantity of green peas was ¼ cup before soaking.
So, soak it overnight or at least 8-12 hours.
Then transfer to a pressure cooker.
Next, add roughly chopped one big-sized or two medium-sized potatoes.
¼ cup cabbage or you can add cauliflower.
But do not add a lot of cabbage or cauliflower.
Any one of the two, ¼ cup.
Add some water, around ½ cup to ¾ cup.
Keep the flame initially high and then pressure cook at low to medium flame for 4-5 whistles.
Out of all the vegetables that we have put inside, soaked peas would take more time.
Once the pressure of the cooker has released, open the lid and mash using a masher.
Let me show you the consistency.
So, this is what it should look like.
Keep it aside.
Heat a kadhai or a pan and add around 1 tbsp oil.
And once the oil becomes hot, add finely chopped onion.
I'm using one small-sized onion.
Fry for 5-7 seconds and then add finely chopped capsicum.
I'm using one small size or you can add ¼ cup if you do not have a small capsicum.
Fry till the onion becomes slightly brown and also your capsicum would become nice and tasty.
After sautéing the ginger-garlic paste, next step is to add 2-3 pinches of turmeric.
Sauté for 10-12 seconds between low to medium flame.
Next, add two small-sized or one medium-sized chopped tomatoes.
After mixing well, next add 1½ tsp red chilli powder or as per taste.
Use byadgi, kashmiri or you can use degi mirch to get nice red colour and less heat.
Then add a little salt only as per the quantity of onion and tomato.
A little water.
Keep the flame low and cover and cook for 5 minutes.
Make sure you mix and stir your masala in between and add a little water if required.
And within 5-7 minutes of cooking,
you would be able to easily mash the tomatoes with the back of your spoon.
Like this.
Next, add the mashed vegetables.
A little water.
1 tsp pav bhaji masala.
Give this a good mix and if required, you can add a little more water to adjust the consistency.
Salt as per taste.
And I am adding a little water to adjust the consistency of the bhaji.
Use a masher to mash the vegetables or mix the vegetables well.
Next, I am adding my homemade red food colour that is beetroot powder.
If you do not have this or do not have time to make it,
you can add ½ cup to ¼ cup of beetroot while cooking the other vegetables.
The pav bhaji looks delicious.
Let's move to the next step.
Pav bhaji is incomplete without pav.
So, here I have got 4 pav.
I am chopping or cutting the pav into random pieces.
With this amount of pav bhaji, you can serve 10-11 pav.
But right now, I am just chopping 4 pav.
Heat your kadhai or pan and add around 1-2 tsp butter.
You may add more if you want.
A sprinkle of red chilli powder and pav bhaji masala.
Keep the flame between low to medium.
Add the chopped pav.
Some chopped fresh coriander.
Keep the flame between medium to high and toss these pav really well.
So, you need to toss these till these become warm and slightly crispy on the outside.
Grate 2 cubes of processed cheese on the pav bhaji.
Butter as much as you like.
Give it a good mix.
Keep the flame between low to medium and mix till the cheese is dissolved.
The colour of the pav bhaji would change.
Next, I am adding 3-4 tbsp of mozzarella cheese.
This is totally optional.
At this stage, switch off your flame.
A gentle stir and then do not mix the pav bhaji.
If you have a fondue pot, then you can serve this cheese fondue in a fondue pot.
In case you do not have it, don't worry.
Take your regular bowl.
Add the bhaji and serve the chopped pav along.
A fondue pot comes with a candle below it.
So, mine has got a tea light candle holder.
Enjoy this warm, delicious, cheesy pav bhaji fondue with your family, friends or guests.
