Hey guys, I'm Gem and welcome to my channel. Today we'll be making three different varieties of
flaxseed pudding. Now if you don't know what flaxseed pudding is yet, it is really similar
to its more well-known cousin of chia seed pudding. It's a really great make-ahead breakfast, but also
it's a very tasty recipe to be used as a dessert. Alright, without further ado, let's get started.
Alright, for this recipe, you only need four ingredients for the base of the flaxseed pudding.
Okay, first we'll make the base pudding. For this, add some ground flaxseed to a small bowl.
You can also grind your own flaxseed at home if you can only get the whole,
ungrounded flaxseeds at the supermarket. Then add some oat milk or any kind of plant-based
milk that you have at hand, and some maple syrup to sweeten the mixture. Then add a pinch of salt
to enhance the flavor a little bit more. Now give it a good stir until all four ingredients are
evenly mixed. Now let's make the first variation, which is the chocolate and nut version. For this,
add the cocoa powder to the base of the mixture, and then give it a good stir until everything is
mixed and evenly, and you no longer see any clumps of the cocoa powder. You definitely
want to make sure of this, as cocoa powder can be pretty bitter. Afterwards, we can transfer it
to a glass jar so we can portion it out for our breakfast, but feel free to just leave it in the
bowl. Once that's done, let it sit in the fridge for at least an hour, but preferably overnight.
Now just before serving, add some nuts. Here I use walnuts, but feel free to use another type of nuts,
and some chopped dark chocolate for the toppings.
Alright, the second variation is the mango and coconut version.
For this, you can add some desiccated coconut to the base mixture, and afterwards add some more
oat milk, and this is because the desiccated coconut absorbs some of the moisture, so this extra oat
milk makes sure that the consistency stays the same. Once that's done, let it sit in the fridge
again for at least an hour. Just before serving, you can top it off with some cubed mango, which
will give you that tropical vibe no matter where you are in the world right now. So now for the
last variation, we'll make the matcha and blueberry version. For this, add some matcha powder to the
base mixture, and then again just give it a good stir until everything is mixed evenly. You definitely
do not want any clumps here, as just like the cocoa powder, matcha powder can be quite bitter when
they're clumped up together. Again, chill the mixture in the fridge for at least an hour or overnight.
Just before serving, add some blueberries to your flaxseed pudding. I'd say that this is my
favorite flaxseed pudding variation, because first of all, I really love matcha, and the combination
of matcha and blueberries are also super healthy, as they're both very rich in antioxidants.
