Plans for the grand opening of my restaurant in Ho Chi Minh City, Vietnam are underway, but I'm nowhere near ready. We started out in a concrete shell that has transformed itself into an establishment that I'm proud of. Building a restaurant? Not Mission Impossible. I had to overcome issues of poor construction, inadequate staff, and bad feng shui. But here I am, eight months later, all set to throw a massive grand opening. Welcome, everybody, to the official grand opening of Restaurant Plavichinho, Ho Chi Minh City. This event needs to work like clockwork. From kitchen, service staff, ambiance, transformation, to performances. This is what I've been dreaming of the last eight months. There's another day at the office.
