It's great to be back in Ho Chi Minh City. My restaurant's almost complete and now I'm going to throw an event to test out my staff to do the things I love doing best, serving people like you. There was no way I was going to open my restaurant without having a soft launch first. It was a test to see how good our menu was. Why is this gooey? And those are lumpy so I'd never accept those. But not even the mashed potatoes went smoothly. It's not bam, it's this, one, twist, look at my hand. We managed to pull through. The restaurant has no ventilation system working correctly. We're short on organization, we're understaffed, but we're trying. You can't read a textbook and learn how to do this. You actually have to physically do it and learn from experience. And so a lot of mistakes are being made, but I believe that they're learning.
