Making & Comparing Dried Persimmons to Fresh

The persimmon is amazing. It's like 4 separate fruits in one. Depending on the state it's in. You have the non astringent crunchy apple like state, the gooey soft sweet astringent state, the semi dried state that's dried on the outside and jammy on the inside like a runny egg and finally a fully dried persimmon that's grainy and dried like a pear.
