Hi everyone, it's Helen here.
Mid-autumn festival is coming so close and this year on the market there's so many interesting
mooncake choices with appealing packaging.
But if you don't have enough time to prepare the traditional mooncake as well as you want
to avoid the high-calorie traditional mooncakes that are on sales, I would suggest you make
a flan jelly mooncake that is pretty easy and quick to make and you can control the
sugar amount totally and wouldn't feel too guilty eating many of them.
Plus, it's still very pretty and even more colorful.
Let's start!
Depending on the kind of agar-agar powder that you use, look on the direction on the
package.
In my experience, one should also reduce the water amount to about two-thirds of the amount
suggested on the package.
I use a fish brand agar-agar powder today and for one tablespoon of the powder, I need
one liter of water.
Also add about four to five tablespoons of sugar and stir well and bring it to a boil.
You will need some cute jelly mooncake molds like these.
There's so many other types on the market that you can buy.
Mine come with, you know, the pointy stand to keep the cake leveled.
And it has some cute patterns on it, like this one comes with Mickey Mouse and this
one has a flower basket on it.
So you can mix the liquid with different colors and fill in the small parts.
And I use matcha powder for the green color, cacao powder for the brown, and some red food
color for the flowers.
You can use a straw to hold a small amount of the liquid and drop into the tiny pot.
Put into the freezer for just about a minute while you prepare the other colors.
Small amount sets really quick, so you need to work really quickly.
And a few more things to note.
Pour in the new layer when the previous layer is slightly set but not yet too firm.
If the previous layer is not yet set, the two layers are going to mix.
And if the previous layer is too firm already, then the new layer will not stick to it and
the layer will separate later.
For white color, I use coconut powder or you can also use milk powder.
Just mixing with the jelly mixture and pouring.
Remember that the jelly is set gradually from the side to the center.
So when you pour in the new layer, make sure that you pour from the sides and don't pour
directly into the middle or the center of the cake because it's more easy to break that way.
And to highlight the pattern on top, I normally use a white color for the base so the object
will pop up better.
I use flan for the filling today.
For the flan recipe, you can look in the description box below or check my video right here.
And then pouring the final layer over to cover the fillings.
Finally, just chill the whole cake for a couple of hours and you are done.
So to unmold, you gently detach the cake from the side of the mold and flip it upside down
onto a plate and voila, look at that, so pretty.
Let's cut into it to see how it's like.
Wow, perfect.
