Hi Friends, here is the second part of my healing to a healthier life. I pray that you will be encouraged and inspired to take my journey. In this video, I shared my simple Mediterranean recipe using grain-free pasta that is easy to make. In this recipe, I used extra virgin olive oil generously. I do live a simple and slow life in the city. I hope I can inspire you through my simple ways of living unhurriedly and slowly; it's worth it. I have more room to discover new things. Choosing to have a slow life is not easy. I went through anxiety, stress, and sickness before finding this kind of life. Maybe some have to calculate the consequences before immersing their life in this slow-living lifestyle. Understandable. Pray about it and let God do the rest.

RED LENTIL ROTINI INGREDIENTS & INSTRUCTION
2 cups of red lintel
1000 ml of water
1 tsp of salt
1 tbsp of olive oil
in a medium pan, put red lintel, water, salt, and olive oil boil for 10-15 minutes.
Stir occasionally
PASTA
cooked red lintel
sweet cherry tomatoes
3-4 cloves of garlic
1/4 cup parsley
salt to taste
2 tbsp olive oil flavored with garlic and basil (optional)
3-4 tbsp extra virgin olive oil - crumbled feta cheese at your discretion
3 tbsp olive oil - parmesan cheese with your choice
1 stalk of green onion
Instructions:
bake cherry tomatoes with garlic, parsley, olive oil, and olive oil flavored with garlic and basil (optional) at 350F for 15 minutes -
On a plate, put cooked red lintel rotini, baked cherry tomatoes, extra virgin olive oil, crumbled feta cheese, parmesan cheese, and chopped green onion.
Raspberry Cola: -
300 ml unflavored sparkling water -
3-5 drops of stevia -
1 tbsp lemon juice -
a handful of chopped raspberries
Instructions: In a glass, pour 300 ml of sparkling water, 3-5 drops of stevia, one tbs of lemon juice, and chopped raspberries. Mix everything.
