Today’s video is how to harvest and cure olives.

A few months ago I planted my first ever olive tree. An Olea EUROPAEA.

And I’ve been watching YouTube videos to find out how to cure olives as you cannot eat them straight from the tree - as you will see, I tried, and it was disgustingly bitter.

Here’s what you have to do:

Put your olives in a bucket of water for 14 days, changing the water every day.

On day 15, you need to weigh your olives and add salt. You’ll need to do a bit of maths as for every 1kg of olives you have to add 70g of salt.

For the next 7 days just give your olives a turn in the salt.

And on day 21 rinse off the olives and they are ready to eat!

I’ve added some olive oil to my bowl and I don’t expect them to last very long!!
