So first we put double cream, milk, sugar and star anise into the pan and bring it to boil.
When mix is boiling we're gonna take out of the heat and let to infuse. Now we prepare our rings.
First we're gonna put some cling film and do it nicely and tight so the bottom is flat guys.
your gelatin leaves inside and melt it inside the warm mix. And now just put your panna cotta mix
inside the rings but don't fill up fully guys just around 60% and put inside the fridge to set.
Next we're gonna do lime mousse. You start with melting butter on bain marie.
Then you mix your eggs with sugar on medium speed until you get nice airy and smooth mix.
Then you put your eggs inside the butter and cook everything slowly on bain marie
until you get nice thick custard. But be careful don't scramble the eggs guys.
When is it ready take out of the heat put lime zest,
lime juice and one leaf of gelatin inside. Mix it properly and leave it to cool down.
In today's dessert I'm using quite a lot of gelatin so if you want to learn how to use it
properly and which kind of gelatin you can use I got full article on my blog so I'm gonna leave
link in description down below so you can check it out. Next you're gonna mix your double cream
until you get nice thick cream but be careful don't over whisk it guys we are not doing butter.
And last thing you just mix both together carefully and leave inside the fridge to set.
And if you like today's recipe guys don't forget to give it thumbs up and if you have some ideas
what you want me to cook leave the comment and maybe I do it next time.
For our orange gel we need to bring it to boil 600 ml of orange juice.
When is it boiling you put 6 grams of agar and cook it for 3 minutes.
Then just put inside any box and let to set inside the fridge.
Then just cut small pieces and put inside the machine to blitz it nicely.
Next we're gonna do chocolate soil. We mix plain flour,
cocoa powder, sugar and butter inside the machine until everything is nicely combined.
Then we're gonna roll inside the two baking papers and bake inside the oven 270 degrees
and if I said clean I mean clean guys. Because if you get any dirt or fat inside the bowl
your meringue is not gonna work properly. Then you start mixing on medium speed until
you get soft peaks like this. Then you start putting sugar very very slowly part by part.
When you put all sugars in change your speed to high and mix until all sugar crystals are gone.
My machine was in summery weather overheating so I didn't melt all sugars properly but it's
not end of the world guys. Your meringue will taste great anyways. Last thing put your cocoa
powder and mix everything together. And now just put your meringue on baking paper and inside the
oven 100 degrees Celsius around one hour. Depends how big meringue you do. And now it's time for
our amaretto orange kale. You start with 250 ml of orange juice in the pan. You're gonna bring it
to boil and put one gram of agar and cook it until you get around 100 ml of juice left.
Then you take out of the heat put one shot of amaretto and leave it to cool down a little bit.
And then you just put on top with your panna cotta and put back inside the fridge to set.

And last thing I will use some orange segments. Peel some oranges nicely and cut few segments
for my garnish. And in this time we got everything ready and it's time to put on the plate.
We start with amazing star anise panna cotta with amaretto kale on the top.
Then we put some chocolate soil, few orange segments, few cocoa meringue, our orange gale,
some leaves of corn flour on top of the panna cotta, tasty small leaves of mint and finish it
with amazing lime mousse. Enjoy guys. And believe me this dessert tastes even better at it looks.
