Hey guys, it's Dani.
Now that we're back in Jersey living on the East Coast, we are in the heart of winter.
But I still find myself craving salad sometimes.
And I have found that the key to a winter salad is a nice hearty green.
So for this Quick Byte, I'm showing you how to make my super simple, clean and delicious
kale and pomegranate salad.
Once you've got your kale prepped and all ready to go, just lay it out on a nice big
serving dish like I've got here.
Now guys, I kid you not when I tell you that my four-year-old Katie actually came up with
this recipe one day when we were in the kitchen together.
So I can tell you in all honesty that this recipe is easy enough.
It's so easy that a four-year-old can make it.
Here's all you're going to do.
Grab one quarter cup of extra virgin olive oil.
Pour that into your measuring cup.
A quarter cup of red wine vinegar.
In you go.
A big heaping half a cup of fresh pomegranate seeds.
Now you could save yourself a few bucks and seed these yourself if you need a friendly
reminder.
Check out my video right over here on how to do that.
Or you could go ahead and splurge and buy them already removed at the grocery store.
Then we've got a half a cup of chopped white onion.
A nice big pinch of kosher salt.
And a little bit of black pepper.
And I almost forgot a clove of garlic.
Right in there.
Then you're just going to take your fork, gently whisk this all together.
Pour it right over the top of the bed of kale.
Beautiful.
I love bringing this to the table, serving it alongside a big Sunday dinner or just as
a nice light lunch for myself or some friends.
It makes a beautiful presentation.
Mmm.
That hearty kale with the light bright dressing and then the pop of the pomegranate seed and
the crunch of the onion.
This salad is a textural explosion.
You guys have got to give it a try.
Thanks so much for watching everyone.
I'm Dani Spees.
I will see you next time with some more clean and deliciousness.
Once you've got the kale.
I got distracted by people in the street.
