Good morning to all you lovely people out there. Today I'm doing another what I eat in a day video
and I hope you're not bored of these videos. Please let me know in the comments what type
of videos you'd like to see going forward. I'd love to hear from you and like I said it's a
what I eat in a day. I'm just about to eat breakfast and I made these overnight oats yesterday with
dates and tahini and some cardamom. This video is actually sponsored by Coconut Bowls. I'm going
to be serving all my meals in their lovely bowls made from coconut shells. I'm going to tell you
a little bit more about that later and before I tell you about what I'm going to top my oats with
I am going to do a little throwback to yesterday and show you how I made them.
So as you can see this is really easy to make and I'll make sure to write out all the recipes
from this video in the description box or link them in case you want to make them for yourself
and I like to have overnight oats even now that we're going into sort of cooler weather here in
Sweden. I think it's a good transitioning food between summer and winter and it's nice to be
able to prepare it ahead of time and it's definitely sweater weather here that's so hard
to say sweater weather here in Sweden today. It's super gray and we're in October. It's definitely
getting colder and darker so get ready for some moody shots but I'm just going to put together
my breakfast now. I'm going to top it with some figs, a lovely autumn fruit and some granola so
let's do that. So it's a little later than we would normally eat breakfast. It's always like
this when we're filming so I'm really hungry and I'm definitely enjoying this. I just wanted to say
that it's such a nice thing to top overnight oats with some like crunchy stuff like granola or nuts
or seeds because it just adds a little bit of texture because overnight oats are very homogenous
and soft and gooey and the granola just adds a lot of crunch and I actually made this granola
with buckwheat. It's a recipe I'm working on for my ebook that I'm trying to work good on so that
I can have it with you soon. I look forward to that and I look forward to sharing more about
that later on and the figs on here just add a little bit of like earthy freshness. I don't know
if that makes any sense but that's kind of how I think figs taste. I think they're meant to be
sweeter than these are but being in Sweden we don't get like the best of the best figs I don't
think but I do like to eat them in autumn and the combo of tahini and dates are perfect for
overnight oats. There's the creaminess from the tahini and the sweetness from the dates
and I just think this is a combo made in heaven or somewhere lovely. So I'm going to eat this. I'm
going to have my supplements. I have omega-3 and we've started eating one Brazil nut a day
because all the selenium you need for one day is in one of these little nuts and Rob's quite adamant
that we eat it every day now so I'm gonna have that and I also take vitamin D3 for those of you
who wonder I take a vegan vitamin D3. I now have a spray so it's not in the pill form and I also
take B12 of course as a vegan just for all of those of you wondering what kind of supplement
I take but now let's eat and then I think I'm gonna go to the market and get some parsley
for lunch and I'll take you with me. Take you with me. So we're back from the market and I'm
going to have a little bit of tea before I head to the kitchen and make lunch and at the moment
I'm really obsessed with earl grey tea. I didn't use to drink black teas for the longest time. I
think I just overdid it living in London in England but now I'm back on it and it's just such
a nice floral taste. Do you guys like earl grey? Let me know in the comments which is your favorite
tea but as I'm drinking my tea and sitting here for a little bit I thought we could talk a little
bit more about the beautiful bowls that I'm using for my meals today and like I said the sponsor of
this video is called Coconut Bowls and they make these lovely bowls out of discarded coconut shells
and they make different varieties or different looks. This one's just more polished. They have
ones that have a rougher part and then the polished part. This is one of them and this
is the other one they sent me and they come in different sizes as well so these are a bit bigger
these are a bit smaller and they are good for different things of course. One thing I think
is really great about this business is that they are buying something that would normally be
discarded off of farmers working with coconuts or growing coconuts and making coconut products and
making a new revenue stream for them and I also think it's such a great sort of sustainability
hack if you will because they're taking a natural product and upcycling it to be a functional item
that we can use in our homes and I do also think that food looks really good in these bowls and
very appetizing. I've seen so many beautiful pictures of smoothie bowls in this type of bowl
but I will say I also think they're great for any other type of food and I do think this sort of
natural raw look inspires me to want to fill them with vibrant yummy plant foods, wholesome and
healthy foods and I even think you could use them around your house to put flowers in or maybe you
know knickknacks, keys and things like that that you just end up throwing around the house. One
more thing I want to say about the company that I think is really great is that they're very
committed to sustainability and they even do things like plant trees with some of their profits and
they do beach cleanups for creating a more clean ocean and protecting habitats in the wild so I
think that gives them brownie points and I forgot to say that they also make really lovely cutlery
from wood they use the smaller discount cards of wood that farmers use to make furniture and stuff
I watched a video about this I'll link that down below it's a really lovely video about the company
and they also sent me this little cup or glass that I look forward to using later when I make
my afternoon smoothie so you'll see it more up close but yeah that's a little bit about coconut
bowls I have a discount code for you it's goodeatings15 which gives you 15% off their
whole range and I'll of course link their website down below and maybe I'll write out what kind of
bowls I have here as well if you want to check those specific types out but yeah now I think
I'm just gonna sit back finish my tea and then I'll meet you in the kitchen to make some lunch
so for lunch I thought I'd show you a really nice dish to make if you have some leftover
grains so I did some strategic and meal planning for dinner yesterday so I'd have
leftover grains and this is brown rice cooked with a little bit of black rice which gives it
a little bit of like a purple tint I also cooked some red quinoa in there just to
give it some more diversity it's a nice thing to do if you're cooking rice to add just a little
bit of other grains I've been inspired by she's so delicious to cook rice in more interesting ways
and I also had some leftover beluga lentils like this tiniest amount so I'm going to add that to
that as well and then so to sort of top this it's going to be like a kind of a fried rice but a very
nordic version I guess and to top it off I'm going to use one of the things that are the
best about autumn I'm going to use some wild mushrooms I'm going to actually mix these
winter chanterelles with some chestnut mushrooms and I did not pick these myself Rob and I enjoy
picking mushrooms but this year we haven't had the chance so I did buy these if you haven't
tried winter chanterelles or chanterelles they're so tasty but really for this dish
you can use any type of mushrooms that you can find and it's nice to just mix a few different
ones and I think I've said everything no one last thing I said with the coconut bowls that it's nice
for all types of food but I just wanted to say that it's not great for like soups because they're
not made to deal well with heat I guess so if you are serving like warmer foods in these bowls
you can prepare them by just rinsing them in a little bit of like tepid lukewarm water because
it sort of prepares them for warm foods just so you know no soups and a little bit of lukewarm
water like I will do now when I serve this in there but now let's mix lunch
it's dinner time now and I've got all my bits out again but before I start with this I just
wanted to say that of course I forgot to sprinkle over the parsley on the lunch
after we'd walked all the way down to the market just to get that
so just to let you know I would have sprinkled a little bit of chopped fresh parsley on there
and it would have been great but that dish is super yummy it looks very simple and maybe a
little bit boring almost but it is super yummy so I definitely recommend it and it's really good
with a little bit of vegan cream cheese you saw me put a little bit of garlic flavored vegan cream
cheese on there and it just gives it a little bit of like creaminess and yeah creaminess but now
I'm going to make dinner and I'm going to make a rice noodle dish with a peanut butter sauce
it's going to be savory and fresh and yummy I'm going to chop up some vegetables some carrots and
some bell pepper to mix all up in there serve it with some basil on top and I'm also going to make
a side of steamed broccoli with some dressings toppings but it will all become clear in a minute
let's make some rice noodle stick dinner
so my giant tray and I are gonna head to the living room and I'm gonna enjoy this dinner
now pitch black out welcome to the nordic atmosphere it's dark half of the year or maybe
more like dark three quarters I'm not bitter at all if it's sunny where you are please enjoy it
for me as well anyways I realize now thinking back of what I've eaten today that I haven't included
many like specifically good protein sources so if you wanted to make this you could definitely
make some crispy tofu baked in the oven or pan fried or some tempeh cubes roasted in the oven
or some skewers or what else yeah I think those are my two best options and what I did with the
noodles is that the sauce sort of gets a little bit sticky so if you add a little bit of hot water
as you toss the noodles the sauce will coat them much nicer just a little tip and that's about it
for me today I hope you've enjoyed this video thank you very much for watching I look forward
to seeing you next Sunday take care everyone bye
