
Homemade Pizza Dough | Emeril Lagasse
Making the dough is the first step in making pizza. All it takes are just four ingredients and you’re well on your way to making better-than-take-out pizza at home.
HOMEMADE PIZZA DOUGH
MAKES ENOUGH FOR ONE 12 TO 14-INCH PIZZA
One 1/4-ounce packet active dry yeast
1 cup warm water (about 110 degrees)
Pinch of granulated sugar
1 ½ teaspoons salt
1 ½ tablespoons extra-virgin olive oil, plus more for bowl
2 ½ to 3 cups all-purpose flour, plus more for surface
In a glass measuring cup, combine yeast, water, and sugar and stir well to combine. Set aside until foamy, about 5 minutes. Transfer to the bowl of an electric mixer fitted with the dough hook. Add salt, olive oil, and 2 ½ cups flour to yeast mixture, and mix until thoroughly combined, dough pulls away from the sides of the bowl, and forms a ball. Transfer dough to a lightly floured work surface and knead to form a smooth and elastic dough that is not sticky, 5 to 7 minutes, adding more flour as needed.
Lightly oil a 2 to 3-quart bowl to coat. Add dough and cover bowl with a damp towel and let rise in a warm place until doubled in size, usually at least 1 hour.
