1 banana, 1 egg, 1/4 cup buckwheat flour. Makes 4 small pancakes.
Cut the banana into slices and place in a bowl. Using a fork, mash them up. Add the egg and mix. Add buckwheat flour and keep mixing. Heat a teaspoon of cooking oil in a non-stick frying pan. Place 1/4 of the batter mix into the pan and smooth out. Place a lid over the pan. Allow to bake about 20 seconds on each side.
