
Eat The Rainbow with Ashlie Thomas and Rob Greenfield
Today, we are eating the Rainbow!
It is known that a variety of colors in what we eat may be associated with diverse and higher amounts of nutrients that the body needs for greater health and wellness!
To highlight this even further, a recent report from Harvard Medical School showed that colorful fruits and vegetables often contain phytonutrients, or compounds that may promote health and help with disease prevention in humans. And interestingly, you will find that there are various phytonutrients associated with each color.
Now, why is this important in the food access conversation? Quite frankly, not everyone has sufficient access to diverse and culturally relevant food choices due to systemic, socioeconomic, and even environmental barriers. However, we believe that healthy food is a human right for all, and consistent access to the food we need to thrive is freedom! Fortunately, many of these colorful foods can be accessed right in our backyards through foraging and gardening!
So to bring awareness to the growing issues surrounding nutritious food access, today we challenge you and your family to join us in searching for (and of course eating) a rainbow of food!

Go find foods in all the colors of the rainbow in a garden/farm, through foraging, or at your local market. (Remember ROY G BIV)
