A shortlist of noodle varieties from the beautiful island
Welcome to the Ramen Rater's top 10 Taiwanese instant noodles of all time 2024 edition.
So by and large of the varieties that companies send me throughout the year, a good good portion
of them are from Taiwan. And so many of them are so good and I'd love to you know try even more.
Taiwanese dry noodles are the bomb. They're wonderful stuff and I'm looking forward to
trying whatever new varieties come out every year. So uh yeah there's some new ones on here.
Let's check them out. In at number 10 we've got Hai Lai with their Lai noodle.
This one is really interesting. It's it's just like you've got a really nice Taiwanese dry noodle
wide and it's got a Sichuan pepper hit and then it's got this vegan mince that is really quite
compelling. I I don't off the top of my head remember what it's made from but I know it's
it's vegan and it's really quite good. So if you can find it give it a try.
In at number nine we've got Mom's dry noodle with their wasabi almond sauce
noodle with tapioca. This is way out of left field folks and really good. Comes in a nice big box with
two servings. It's like you've got spicy and then from the wasabi then you've got the almond sauce
which is kind of sweet almost almond paste like and then the tapioca it's boba like from bubble
tea it's boba and it's really good boba too and it all comes together almost as a deserty kind
of thing almost as like a sweet kind of salad kind of thing. It's really unique and fascinating
and good and hits all these different savory notes so well. So yeah if you can find this one
it's it's definitely a trip. In at number eight we've got Little Couples with their chicken rice
flavor noodle. This one has such a nice noodle and chickeny flavor to it that's really good.
This came out at the same time that their fish head casserole flavor was debuting and that one
is quite good as well and they've also got a brand new one they've got a tom yum noodle that's pretty
darn good so check them all out. In at number seven we've got Little Cook with their Thailand green
curry chicken. This one comes in a bowl. I sought this one out uh I think it was the last time I
was in Taiwan and Taipei and it it's got two bowls so you get it it looks like a big bowl
you pull one bowl out of the other you make the noodle in one you drain it off into the other
make a sipping soup with that add in a big retort pouch that has chicken and vegetables and peppers
oh man it's to die for folks it's got just like the nicest green curry flavor
and yeah this is supremo stuff I love it. In at number six we've got Noodle Mix with their
Chinese sesame oil konjac lion's mane mushroom and this wow okay so the broth is really good
the konjac noodle is just the right gauge so it's not rubbery it's really quite good and
the lion's mane mushroom this is the first introduction to lion's mane mushroom I've ever
had never tried it before and I really had to like look and research a bit to make sure that I
didn't mistranslate this as actually it was chicken. The meatiness of this mushroom the
texture of it is just wonderful and it really is quite good if you're looking for chicken
texture and a good thing that soaks up flavor lion's mane mushroom is really quite a good
option for you and this just comes together so well they've also got dry noodle varieties
that are absolutely amazing so yeah check out Noodle Mix these guys are making some really
wonderful stuff. In at number five we have John's with their braised stallion oil noodles
these are another one that's just very unique because they're pairing flavors that I don't
usually see in the Taiwan dry noodle ranges from most companies usually you'll see like a
Sichuan pepper one like a mala sauce noodle a sesame paste noodle maybe a dan dan noodle
this one kind of had like a mustardy and and just like different flavors that just kind of
fused together so well very masterfully and simple at the same time uh yeah so if you can
find this range they make quite a few varieties they're all good. In at number four we've got
Asha with a Lao Tao beef and tendon noodle and this wow this has a good noodle a very savory broth
but the one thing that just sets this apart is the beef and tendon the beef and tendon in this
is just savory succulent wonderful comes in a big box and there's three in this range there's a
red box which is amazing this one that has the tendon as well and then there's a white box which
I believe is wagyu beef so yeah good stuff all around. In at number three we've got Kung Fu with
their aged Shao Chang wine variety that has it's a it's a chicken drumstick variety
this one has a great noodle very savory broth but the sheer amount of chicken that is in this one
is just really quite amazing it's good it's nice the oiliness in this one is just primo
yeah the the chicken soup varieties that are coming out of Taiwan are really quite good you
might have noticed one last year on the list I really don't want to have 10 chicken soup varieties
on the list so I picked this one but yeah good stuff really really tasty. In at number two we've
got Mom's Dry Noodle Surf Mama Shao Chang goose oil noodle this one wow this this has a broad
dry noodle and it's got this sauce and and and meat with it which reminds me of like the filling
for pork bowel and it's so good I it's it's like it's greasy it's noodley it's chewy it's everything
ah it's it's really good and uh yeah I just look at it I mean look it's freaking as good as it
looks folks it's wonderful so if you can find it give it a try. All right and in at number one we've
got Asha with their meteor noodle hot and sour variety now these guys on their website are
calling it dan dan noodle but on the packaging it says hot and sour so if you're looking for it
that's what yeah anyways this one has a their meteor noodle which is think of a flat noodle
but there's an extra I guess you'd call it a fin on top so it's got three sides to it
this is kind of a weird thing I think almost kind of gimmicky but it honestly really helps
with the mouth feel the mouth feel on these is nice and chewy really good and the flavor is like
this really nice balance it's hot and sour but I'm not getting that like extremely strong punch of uh
a black vinegar I'm not getting that extremely strong hit of Sichuan pepper it's comfort food
folks I mean this is just excellent stuff you get it in Taiwan you can get it in the States so if
you want to try something really really good out of Taiwan this is it. All right as always thanks
for watching uh this is a lot of fun for me to do and I love trying all these products if you're a
in Taiwan or uh somebody who really likes Taiwanese dry noodles and wants to send me some
varieties I haven't tried please by all means do I would really like to do a Taiwanese dry
dry noodle top 10 list and a Taiwanese instant noodle list but the varieties of instant noodles
from Taiwan that I get are very far and few between so if you are a Taiwanese instant
noodle manufacturer I'm talking like fried wheat noodles get a hold of me because I would love to
try more of those as well so yeah all right this has been Hans the ramen raider wishing
you enjoy medium noodles each and every day have a good one bye
