The most tender lazy dumplings from one packet of cottage cheese 🥰
Ingredients
Cottage cheese - 1 packet (350 g)
Egg - 1
Sugar - 2 level tbsp
Vanilla sugar - 1 packet
Salt - ¼ tsp
Chia seeds - 1-1.5 tsp
Cornstarch - 1-1.5 tbsp
Wheat flour - 3.5-4 level tbsp
✔ If the cottage cheese is very wet, add another ½ tbsp of flour.
✔ If you have time, refrigerate the dough for 20-30 minutes. During this time, the flour, starch, and chia will absorb the moisture, making the dough denser and more tender. In this case, you can start with just 3 tablespoons of flour and 1 tablespoon of starch, adding a little more flour if needed.
✔ A flourless version is only possible with very dry cottage cheese: use 2-2.5 tablespoons of chia seeds and be sure to chill the dough for 30-40 minutes. However, this method is less stable, so for most cases, I recommend the basic recipe with a small amount of flour and starch.
