I break down three simple tricks to ensure your bison smash burgers stay moist without drying out on the hot griddle.
Oklahoma Style Bison Smash Burgers
Ingredients:
4 - 3oz Bison balls, loosely formed
1 large yellow onion, thinly sliced
4 slices of mild cheddar cheese
4 hamburger buns
Olive oil
Salt
Garlic powder
Directions:
Slice the onions very thin, between ⅛ and ¼ inch thick. Sprinkle the onion with about ½ tsp of salt after placing the onions on a paper towel covered plate. Let them rest/sweat for 15 minutes and then blot the onion with paper towels.
Mix the Sriracha and Mayo sauce.Form and measure the bison balls into 3 oz sizes. Do not over work the meat.
Preheat a cast iron griddle or pan over medium high heat (425*F).
Once hot, drizzle a little olive oil over the griddle and spread it around with your metal spatula. If you want the buns toasted you can add them at this point. It should take a minute or two. Remove to keep warm.
Add about ¼ cup of the onion to the pan and top each pile with a bison ball.
Place a piece of parchment paper over the ball and smash with a press until the meat is about ¼ inch thick.
Cook two balls at a time. Then peel off the parchment paper and make the 2nd patty. Salt and garlic powder the meat and let it cook approximately 1 and ½ minutes on the first side or the meat starts looking cooked on top.
Once you flip the burgers, top them with a slice of cheese and cook for another 30 seconds. The cheese should begin to melt.
Add the sauce to the bottom and top bun and add the bison burgers. Enjoy these bison burgers with your favorite side dishes.
Creamy Sriracha Avocado Mayo Sauce
Ingredients
1/3 cup avocado mayonnaise
1 to 2 Tbsp sriracha (depending on heat preference)
1 tsp Dijon mustard
1 tsp fresh lime juice
1/4 tsp garlic powder
Pinch of smoked paprika
Combine in a bowl and refrigerate until needed.
