I prepare a fresh potato salad with chives, creamy herb salmon, and a homemade sugar-free chocolate spread — perfect for a slow afternoon with tea. There are also rainy days spent caring for my houseplants and little reflections on slowing down and enjoying the beauty of ordinary life 🌿

Homemade Chocolate Spread
• 200g roasted hazelnuts
• 65g roasted cashews
• 3–4 tbsp unsweetened cocoa powder
• 1½ tbsp melted coconut oil
• 7 tbsp maple syrup
• 4 tbsp oat milk
• Pinch of salt

Fresh Potato Salad and Chives
• 800g potatoes
• 4 spring onions
• Small handful of fresh chives
• Small handful of basil
• Small handful of parsley
• Handful of sugar snap peas (optional)
• 2–3 tbsp extra virgin olive oil
• 1 tbsp apple cider vinegar
• 1 tsp balsamic vinegar
• 1 tbsp mustard
• Salt & pepper to taste

Creamy Herb Salmon
6 salmon fillets
• 1 large onion or 3–4 shallots
• 2 garlic cloves
• 1 tbsp English mustard or Dijon mustard
• 1 glass dry white wine
• 300ml cream
• 1 tsp cornflour
• Small handful of fresh tarragon
• Small handful of parsley
• 1 tsp butter
• 3 tbsp extra virgin olive oil
• Salt & white pepper to taste
