In 1962, a fifty-five gallon steel drum was sliced lengthwise in a Memphis backyard, hinged with chain, and packed with hickory by a man who worked porter at the Peabody. The smell carried. Saturdays, the whole block skipped church for the smoke. Number 19 on this list cost six cents a serving in 1965. Number 14 was the dish your grandmother in Watts carried to a folding table in July 1967. Number 9 on this list was made from the parts the white grocer wouldn't put in his case. These 25 dishes fed Black neighborhoods through voter drives, church picnics, and Saturday block parties when the city wouldn't. None of these dishes were lost.
