Smashed Broccoli Recipe
Ingredients:
1 head of broccoli, organic, cut into florets, rinsed and dried with paper towels
Olive oil
2 cups Parmesan cheese, grated
2 cups Cheddar cheese, grated
2 - 3 cloves of garlic, minced
1 Tbsp olive oil
2 tsp butter, melted
Whole bagel seasoning
Directions:
Preheat oven to 400 degrees F.
Place the broccoli florets in a steamer and steam until just fork tender for about 5 minutes. Pour out the florets and pat dry with paper towels. Slice some of the florets as needed so they are about ½ inch thick.
Combine 1 Tbsp. olive oil, minced garlic, and 2 tsp. of butter.
Cover a baking sheet with parchment paper. Place a pinch of parmesan cheese and cheddar on the parchment paper followed by a piece of broccoli. Brush a bit of the mixture of olive oil and garlic over the broccoli. Sprinkle with bagel seasoning or a seasoning of choice. Top with more cheese, both kinds and continue this with the rest of the broccoli until the pan is full.
Bake at 400 degrees F. for about 15 minutes or until the cheese looks golden and crispy. Use a spatula to loosen each piece of broccoli and place on a serving plate and enjoy!
You can refrigerate left overs. Reheat in an oven or frying pan, just know the cheese will melt again.
