I fell in love with India during my first trip to the country in January of 2018. I had no idea that my love for this beautiful place could grow even more, but that’s exactly what happened when I went back eleven months later in November. The history is fascinating, the culture is beautiful, the people are warm and friendly, and the food is magnificent. And I got to experience it all with my travel buddy Sam from Sam and Audrey, which made it even better!

After spending a quick 48 hours in the northern city of Amritsar, it was time for us to head back down south to start some new adventures in Bangalore. Come join me and Sam as we fly from Amritsar to Bangalore on AirAsia India and try some Indo-Chinese food!

With our time in Amritsar winding down, I had to thank my amazing friends Deepak from Amritsar Walking Tours and Japneet for being such friendly and knowledgeable guides and showing us a wonderful time. As we rode to the airport, we reminisced about the incredible Amritsari food and our humbling experience at the biggest kitchen in the world at the Golden Temple.

Luckily we arrived at the airport two hours early, because there was a massive line just to get inside. And with an hour flight delay, we thankfully had enough time to get into and through security. While we waited in line, we met some really nice people who were making chai and passing it out to people. It was steaming hot and full of cardamom and ginger flavor! Remember, when you come here, wear the traditional garb. Not only does it make people want to talk to you and take photos with you, it’s also a great way to show respect for the Sikh culture.

The airport is pretty small, with only one terminal. For dinner, we decided to get some Indo-Chinese food: a kati roll (which is basically a rolled-up roti with paneer, onions, and spices inside) with a green chili chutney, noodles with chili chicken, and noodles with vegetables. The kati roll with the chutney was really delicious and piping hot! The chili chicken was hard and fatty, almost like chicharron. All in all, it wasn’t my favorite meal, but it was better than being charged an arm and a leg for a meal on the flight.

After another thirty-minute delay, it was finally time to board our flight. Delays and cancellations at airports in India are extremely common, so you just have to roll with the punches and get used to it if you’re going to be traveling there.

As we settled into our flight, our neighbor next to us let us try a soy dish called Amritsari Chaap, which tastes like chicken. Then a flight attendant randomly gave us another meal! It’s called a Southern Indian Delight and contained idli, sambar, and a fine-grain rice dish that is similar to polenta. The sambar was fantastic! After a two-and-a-half hour flight, we arrived in Bangalore just before 1 a.m., with breakfast scheduled for eight hours later. For once, our bags beat us to the baggage carousel and from there, we walked through the massive Bangalore airport and requested an Uber.

Uber worked differently here than what I’m used to. Instead of directly calling an Uber, I received a pin number on the app. Then you get to the area designated for the type of Uber you requested, line up in the queue there, and when it’s your turn, you give the pin number to the Uber employee, who then allows you to get into the next available Uber. Our ride to our Airbnb, which is in a nice area in the center of the city, took another 45 minutes, so it was 2 a.m. by the time we arrived.
