I’m so excited to finally be in my 89th country, Iran! I’ll be teaming up with some friends for the entirety of this trip, and I can’t wait to share it all with you. Come with me as I kick off my trip in style with an Iranian goat head stew called kale pache!

We’d be starting our adventure in Tehran with kale pace at Shir Khoda Restaurant. The cook hits the bell when someone enters. The kale pache is a stew that consists of goat head meat, innards, and goat brains, and it’s typically eaten from 4am to 10 am. It gives you energy for the day!
I watched the cook take off bits of meat and organs. He even fed me and Mr. Taster some of it. He scrambled it up in a bowl and served it with Barbari bread, which is crispy, crunchy, and full of sesame seeds. They cook it in a tandoor.
The kale pace was unreal. Adding the bread to the kale pace thickens it up. They even brought the entire goat head to our table, as well as some black garlic.
Then, we went back over to the cook, who started taking apart the meat from the head. He fed me some; it was so unique and juicy! He added oil, salt, pepper, and saffron. This is the actual goat head stew, with head meat, brains, tongue, ears, and more! They even put the jaw bones on the plate as decoration!
I could smell saffron and cinnamon in it! You just take the bread and use it to grab pieces of the meat and brains. The meat was stellar! The 7-hour slow-cooking process makes it super tender. It fell apart in my mouth!
The ear meat was so buttery, and was very different from the tough animal ears I’ve had in the past. Mr. Taster fed me some of the brain. We also had some leg, but the brain was the best! It was the best brain I’ve had in my life, and was my favorite part!
Then, we had some lemonade as a palate cleanser, and finally some Persian tea to aid in our digestion. The tea comes with saffron rock candy, which you stir it with. It sweetens the tea as you stir it!
We followed that with a unique summertime drink called tokhme sharbati, which has many different variations. This one contained orange blossom, mustard, rose water, and chia seeds! It definitely gave me some energy! The rose was the most prominent flavor!
Next, we headed to a bakery to see them making the bread we had with the kale pace. I watched them flatten out the dough and place It on the rocks inside their slanted oven. They also add different seeds including sesame seeds and mustard seeds.
They even gave us some bread for free. It was so crispy and smoky. I loved it! They say it’s the best bread in Iran, and I have to agree. It’s the best bread I’d had in a while!
