BARFI
Episode 1: Generation Why (12:27)
In the premiere, Kamala quickly tries some barfi while shopping in Jersey City with her mother. This decadent sweet is a dense bar made from condensed milk, ghee (clarified butter), and lots of sugar. Saffron, cardamom, and almonds are also common ingredients!
PANI PURI
Episode 4: Seeing Red (12:30)
After Kamala arrives in Karachi, she meets and her mother Muneeba meet up with some local family friends at a boathouse. There, Kamala tries pani puri, one of my favorite South Asian street food dishes. The dish consists of a hollow ball of leavened dough, which is filled with potatoes, chickpeas, vegetables, various chutneys, and a spiced water called pani!
BIRYANI
Episode 4: Seeing Red (26:50)
Also in episode four, Kamala eats biryani with Kareem and his friends on a local beach at night. I like to think this is Clifton Beach, located in the Clifton neighborhood in Karachi. Not far from the beach is Birwani Wala, where I enjoyed beef sindh biryani and chicken sindh biryani. Biryani is a layered rice dish that has many variations throughout South Asia.
PARATHAS
Episode 5: Time And Again (6:10)
In episode five, Kamalaās great-grandmother Aisha eats parathas with some mango after being invited inside by her future husband, Hasan. Parathas are a flaky, unleavened flatbread made from wheat flour. Theyāre eaten with lots of South Asian dishes including dal, chana, vegetables, and meat.
HALWA PURI: This popular breakfast dish is everywhere in Pakistan. It consists of a fried, puffed-up flatbread called a puri, which is served alongside potatoes, chickpeas, a pickled dish called achar, and a sweet semolina flour dish called halwa!
HALEEM: Haleem is a thick, pasty stew made from a mix of meat, lentils, and grains. Itās popular throughout South Asia and the Middle East. The version I had in Karachi came with fresh naan, mint, fried onions, chilies, and lemon wedges.
DAHI BARAY: A cool and refreshing dish consisting of deep-fried lentil balls served in a smooth, sweet yogurt. Sometimes itās topped with crispy pieces of fried dough and is perfect for a hot day!
NIHARI: A savory and velvety beef stew consisting of slow-cooked beef, bone marrow, and sometimes beef brains, in a rich, oily stew thatās meant to be eaten with fresh naan.
FIRE PAAN: A shocking South Asian street food that originated in India. Itās a flaming variation of paan (a common street food consisting of a mix of nuts, berries, spices, seeds, and sometimes chocolate or tobacco, wrapped in a betel leaf. Itās often used as a stimulant, breath freshener, and digestive aid. To make fire paan, the mixture inside the leaf is lit on fire and shoved directly into customersā open mouths!
And thatās it! What are some other Pakistani or South Asian dishes you think Kamala Khan and her family would like? Let me know in the comments below!
