Ingredients (Serves 4–6)
• Boneless chicken thighs – 500 g (about 1 lb / 2 US cups diced)
• Green cabbage – 600 g (about 8 US cups / 7 UK cups chopped)
• Onion – 200 g (1 large / 1 US cup chopped)
• Carrot – 150 g (1 large / ¾ US cup diced)
• Potato – 300 g (2 medium / 2 US cups diced)
• Garlic – 3 cloves (9 g / 1 tbsp minced)
• Vegetable oil – 2 tbsp / 30 ml
• Plain flour (optional, for slight body) – 1 tbsp / 8 g
• Chicken stock cube – 1 cube
• Water – 1.5 litres / 6 US cups / 5 UK cups
• Salt – 1 tsp / 5 g (adjust to taste)
• Black pepper – ½ tsp / 2 g
• Dried thyme (optional) – ½ tsp / 1 g
• Bay leaf (optional)
Extras
• Add a handful of rice or small pasta for extra stretch.
• Stir in a spoon of tomato paste for a deeper broth.
• Finish with chopped parsley or a squeeze of lemon for brightness.
