170℃ (340°F) / 35 minutes
[Instructions]
① Make the sponge cake: Place eggs in a bowl and add sugar. Heat over a water bath to approx. 35℃ (95°F). Whip until thick and ribbon-like.
② Add sifted cake flour and fold until no dry powder remains. Mix cocoa powder into vegetable oil until smooth, add warm milk, and mix well. Pour into the batter and fold evenly.
③ Pour into the 15cm diameter mold and bake. Once out of the oven, invert to cool.
④ Make the chocolate ganache cream: First, heat the whipping cream (150g) until boiling. Pour into the dark chocolate, mix well, and refrigerate overnight.
⑤ Stir the chilled ganache until smooth. Add the remaining whipping cream (200g) and sugar, then whip.
⑥ Slice the sponge into two thick layers. Assemble with strawberry cream filling. Dust with powdered sugar and cocoa powder, decorate with strawberries, and complete.
