A Xia with family went into the mountains to forage for wild mushrooms — it was exhausting, but the full basket of harvest made it all worthwhile. Fresh Termite Mushrooms, Russula virescens, Saffron Milk Caps… cleaned, sliced, and stir-fried with fragrant garlic. A bit more oil makes them extra aromatic! Tossed with chili, the sizzling stir-fried mushrooms were ready to serve. There was also Termite Mushroom chicken soup — as fresh as spring water. A spoonful of tender chicken and mushrooms warmed us to the core. All the day’s hard work was worth it — even after a few tumbles along the way!
