🥞 Fluffy Japanese Pancakes
Ingredients (for 3 to 4 pancakes):
2 large eggs (separated)
2 tbsp milk
¼ tsp vanilla extract
¼ cup cake flour (or all-purpose, sifted)
½ tsp baking powder
2 tbsp sugar
Butter or oil for the pan
Water (for steaming)

Instructions:
1. Separate egg yolks and egg whites. Chill egg whites in the freezer for 10 minutes (in a small airtight container).
2. In a bowl, whisk egg yolks with milk and vanilla until smooth.
3. Sift flour and baking powder into a separate bowl.
4. Add the dry mixture to the yolk mixture in 3 stages, whisking until creamy and smooth.
5. Whip egg whites: Start on low, add sugar gradually, then beat on high until stiff peaks form.
6. Add ⅓ of the meringue to the egg batter and gently whisk to smooth. Fold in the rest carefully with a spatula.
7. Preheat a nonstick pan on low heat and lightly oil it. Spoon the first round of batter into the pan to make 3 pancakes, spaced apart. Then come back around and add a second scoop on top of each one to build height.
8. Add a splash of water to the pan (not on the pancakes), cover, and steam for about 6 minutes.
9. Gently flip, add a little more water, cover again, and cook another 3–4 minutes.
10. Serve warm with butter, fruit, and homemade syrup (recipe below!).

🍯 Homemade Pancake Syrup
Ingredients:
½ cup brown sugar (light or dark)
¼ cup water
1 tbsp unsalted butter
¼ tsp vanilla extract
Pinch of salt (optional)

Instructions:
1. Add brown sugar and water to a small saucepan.
2. Heat over medium, stirring until sugar dissolves.
3. Simmer gently for 3–5 minutes (don’t boil).
4. Turn off heat, stir in butter and vanilla. Let cool — it thickens slightly as it cools.
