SUMMER PENNE WITH TOMATOES & ARUGULA (Simple Pasta Recipe)
Ingredients:
• 50 g (⅓ cup) pine nuts
• 200 g (2 cups) pasta
• 3 tablespoons olive oil
• 5 tablespoons balsamic vinegar
• 200 g (2 cups) cherry tomatoes
• 3 green onions
• 4 tablespoons sun-dried tomatoes (in oil)
• 100 g (1 cup) grated Parmesan
• Arugula, lovage, salad herbs, blue fenugreek
• Water, mustard, pepper, garlic powder, paprika, salt
• Balsamic glaze (to finish)
Instructions:
1. Cook the noodles according to package directions.
2. Toast pine nuts until golden in a dry pan.
3. Whisk wet ingredients and herbs in a small bowl.
4. Slice tomatoes and onions.
5. Combine all ingredients. Top with arugula, parmesan, and balsamic glaze.

Ingredients:
• 150 g (1¼ cups) flour
• 1 egg
• 115 g (½ cup) natural peanut butter
• 60 ml (¼ cup) water
• 2 teaspoons blueberry powder
Instructions:
1. Preheat oven to 160°C (300°F).
2. Mix dry and wet ingredients separately, then combine.
3. Roll and cut shapes with cookie cutter.
4. Place on parchment-lined baking sheet.
