A healthy snowy mooncake for the mid-autumn festival - Snowy mooncake made of Chinese Yam skin, with mung bean filling, and black sesame seed filling. No baking, no dairy, minimal oil and sugar. Very simple, easy-to-make, and healthy mooncake recipe! You can also make these little desserts for other occasions too as they are not your typical mooncakes.

🥮RECIPE

🥮Chinese Yam snow skin
300g Chinese yam
100g glutinous rice flour
30g sugar
2g salt
30g honey
(the above can make about 10-12 small mooncakes)

🥮Mung bean fillings
Split mung beans 100g (for 5 small mooncakes)
Sugar 10g
Honey 10-20ml
Your own choice of plant milk 75g
Vegetable Oil or coconut oil a small amount

🥮Black sesame filling
Black sesame seeds 100g (for 5 small mooncakes)
Sugar 10-20g
Your own choice of plant milk 75g
Honey 20ml
Vegetable Oil or coconut oil a small amount
