⭕DAY 1 – SPONGE CAKES, SYRUP, JAM, GANACHES AND MACARONOS
Ingredients for cakes:
20 eggs (divided into 2 bowls, 10 per bowl)
600 g of sugar (300 g per bowl)
4 tablespoons of sunflower oil (2 per bowl)
600 g of all-purpose flour (300 g per bowl)
Ingredients for batch 2 (35x35 cm square mold):
20 eggs
600 g of sugar
4 tablespoons of sunflower oil
600 g of all-purpose flour
Molds used:
2 round molds 25 cm diameter
1 square mold 35x35 cm
Oven: 160–170 °C, 50 to 60 minutes per pan
Red fruit jam:
300 g red berries
½ cup sugar
½ cup water
Caramelized syrup:
1 cup sugar
2 cups water
Ganaches (black and white):
500 g chocolate (white or dark)
500 g cream of animal origin
30 g butter
Macarons:
135 g egg whites (about 4 whites)
190 g icing sugar
190 g ground almonds
190 g common white sugar
Macaron decoration:
Edible gold dust
A few drops of vodka
⭕DAY 2 – MERINGUES, FRENCH CUSTARD, CUTTING AND FILLING CAKES
Meringues:
4 cups common white sugar
2 cups egg whites (approx. 15 whites)
1 tablespoon cornstarch per bowl
Flavorings: lemon and strawberry (optional)
French buttercream:
2 cups common white sugar
200 ml water
15 egg yolks (from whites used in meringues)
700 g softened butter
Base filling for cakes:
1 liter of very cold vegetable cream (Puratos or similar)
300 g Philadelphia cheese
150 ml condensed milk
1 package crushed Oreo cookies
Red berry jam (2–3 tablespoons per layer)
Caramel syrup (quantity to taste)
Layer cakes:
4 slices of sponge cake 35x35 cm (20 eggs)
4 slices of round sponge cake 25 cm (10 eggs)
⭕ DAY 3 – CUPCAKES, DECORATING THE GODMOTHER'S CAKE, TWO-TIER CAKE, CUPCAKES AND SWEET TABLE
Cupcake ingredients:
8 whole eggs
220 g white sugar
1 cup milk
1 cup olive oil
500 g sifted flour
8 g sifted baking powder
1 teaspoon vanilla extract
Baking cupcakes:
170 °C, heat up and down
20-25 minutes per batch
Decorate godmother cake:
Chocolate mousse with Nutella and vanilla sponge cake
Cover two ingredients (750 g butter + 750 g condensed milk) with butter cream.
First thin layer catches crumbs, refrigerate 15 min
Second thicker layer, smooth well
Decorate with edible rice paper ribbons, natural flowers (stems disinfected in vodka), white pearls, macarons and gold details with a brush.
White fondant plaque with the name "Alex", letters painted with gold powder diluted in vodka
Decorate a two-tiered cake:
Apply a thin layer of buttercream (crumb catcher) and refrigerate
Second thicker layer, smooth well
