
Roasted Lemon Garlic Butter Chicken In a Pizza Oven | Cooking with Friends w/ Bob Trudnak

Ingredients:
• Whole chicken leg quarters (trimmed and lollipopped)
• Bottled Greek dressing (for marinade)
• Heath Riles BBQ Simple Citrus Rub https://bit.ly/3kTdEU9
• BBQ Bob's Lemon Garlic Butter Rub https://bit.ly/44856Bu
• Lemons (halved, for roasting and squeezing)
• Olive oil (for the cast iron pan)
Directions:
1. Trim whole chicken leg quarters by removing the backbone. Lollipop the drumsticks by cutting around the knuckle and cleaning up the bone for better presentation and even cooking.
2. Place the prepped chicken in a resealable bag. Add Greek dressing, a sprinkle of Simple Citrus Rub, and Lemon Garlic Butter Rub. Seal and marinate in the fridge for at least 3 hours.
3. After marinating, remove the chicken and season generously with more Simple Citrus Rub and Lemon Garlic Butter Rub on all sides.
4. Preheat your pellet grill (we used the Weber Searwood) to 275°F using Royal Oak Charcoal Pellets. Smoke the chicken for 45 minutes, or until internal temperature reaches 155–160°F.
5. While the chicken smokes, preheat a cast iron skillet in a pizza oven set to 600°F. You can also use a broiler if you don’t have a pizza oven.
6. Add a little olive oil to the hot skillet, then place the smoked chicken legs in the pan. Crisp the skin in the oven for about 4–5 minutes until golden and crackly. Roast lemon halves alongside the chicken.
7. Remove the chicken from the oven and let rest for 15 minutes. Squeeze the roasted lemons over the top and serve immediate.
