This is one of the tastiest and easiest mushroom pasta dishes to make, and it's made without cream. Yet it's still creamy and cheesy, thanks to the combination of hot pasta water, plenty of starch, and freshly grated Parmigiano Reggiano. The rest of the dish is seasoned with white wine, butter, chives, and garlic! Pair it with any of your favorite proteins, and it makes for a delicious dinner.
INGREDIENTS:
1 lb dried pasta, any shape works, but I used Mezze Maniche
1 Tablespoon olive oil
2 Tablespoons salted butter
3 shallots, diced small
8 oz white mushrooms, sliced and then chopped
4-5 garlic cloves, minced or pressed
1/8 teaspoon red pepper flakes, Add as little or as much of this as you'd like
a generous splash of white wine, I used Pinot Grigio, but any dry white wine works
2 Tablespoons fresh basil, finely chopped
1 Tablespoon fresh parsley, finely chopped
salt & pepper to taste
1 1/2 cups Parmigiano Reggiano, freshly and finely grated
