RECIPE:
Rice Paper Dumplings
- 300-400g of your favourite vegetables. This dish is suitable for avoiding leftovers. Feel free to use different vegetables to your liking so that nothing ends up in the bin. (Here we used: carrots, white cabbage, mushrooms)
- 1 block of firm tofu
- 14-24 rice paper sheets (depending on size)

Cut all your vegetables in small pieces. Crumble the block of tofu and mix it with the vegetables. Add herbs and spices (here: chives, soya sauce, ginger, pepper, salt, paprika)
Now you can fry the mixture in a pan or use it raw (in this case, please make sure that your vegetables can also be eaten raw)
Now take a casserole dish, pan or other suitable container and fill it with warm water. You can now dip a piece of rice paper into it. It should only be slightly soft, not soggy. Unfortunately, mine were still a little firm, yours should be a little softer than in the video. Fill the rice paper with the (cooled) vegetable mixture, fold the sides over to form a parcel. Repeat the process with a second rice paper. Make as many parcels as you need until your vegetable mixture is used up. Now you can sprinkle the sides with sesame seeds and fry the dumplings in the pan. Enjoy your meal!

Sauce:
You can dip your dumplings in different sauces, hoisin or sriracha are a good choice. Or you can try my very simple tahini sauce.
- 2 tablespoons tahini
- 1 tablespoon of soya sauce
Put everything in a jar with a lid, shake the mixture and dilute with water to the desired consistency.
