To Make Jower Khichdi
Jowar - 1/2 Cup
Ghee - 2 Tbsp
Whole Spices
( Cinnamon, Cloves, Bay Leaf, Cumin Seeds )
Cashew Nuts
Large Piece Ginger
Green Chilli - 3 Nos
Carrot - 1 No.
Beans - 1 Cup
Peas - 1/2 Cup
Tomato - 2 Nos
Moong Dal - 1/2 Cup
Turmeric Powder - 1/2 Tsp
Salt - 1 Tsp
Garam Masala - 1 Tsp
Water 4 Cups
Method:
1. Dry-roast the jowar on a pan until it turns golden brown in colour.
2. Let it cool and grind it into a coarse powder. Keep it aside.
3. To a pressure cooker, add ghee and drop in cinnamon, cloves, bay leaf and cumin seeds.
4. Saute and add the cashewnuts.
5. Now add ginger, green chillies and saute for a few more seconds.
6. Drop in carrot, beans, peas and saute for 2-3 mins. Add in the tomatoes.
7. Add the washed moong dal and mix. Add turmeric powder, salt and garam masala.
8. Mix well and add the powdered Jowar.
9. Mix it all and then add water. Cook for 10 mins.
10. After 10 mins, place the lid with whistle and cook the khichdi on a medium low flame for 2-3 whistles.
11. Lastly garnish the khichidi with roasted cashewnuts and coriander leaves.
12. Healthy and yummy Jowar Khichdi is ready to be served.
