Today we are in San Pellegrino, a small village near Gualdo Tadino in Umbria, with 77-year-old Anna. Anna has prepared one of her specialties: nidi di rondine, a rolled pasta dish filled with goose and beef. Everything used in the recipe comes from her family farm, which they transformed into a small agricultural business around eight years ago. They raise hens, ducks, guinea fowl, turkeys, sheep, pigs, and calves—producing their own meat, eggs, and vegetables. This is her recipe:
For the dough
600 g all-purpose flour
7 small eggs
For the ragú
1 goose leg
250–300 g minced beef
1 celery stalk
1 small carrot
1 onion
1/2 glass white wine
300–400 g peeled tomatoes
Olive oil
Salt and pepper, to taste
Water
For assembling:
Parmesan cheese
Mozzarella
For the béchamel:
1 litre milk
50 g butter
8 teaspoons all-purpose flour
Salt, to taste
A pinch of nutmeg
A pinch of black pepper
