Episode 7 of “Off Grid Survival Skills”, airing Feb. 7, delves into an unconventional yet highly sustainable method of meat foraging—roadkill processing. Hosted by survival expert Marjory Wildcraft, this episode features Red Louvish, a Texas-based herbalist and forager who has spent years perfecting the art of reclaiming high-quality, organic meat from animals found along highways.
Wildcraft and Louvish take viewers through a detailed, step-by-step guide on assessing the safety and edibility of roadkill, field dressing techniques, and best practices for processing meat. Louvish, who first discovered roadkill foraging as a cost-effective food source while working as a courier, now champions the practice as a means of reducing food waste and promoting sustainability.
“In many cases, these animals have been hit just hours before being discovered, and with the right knowledge, they can provide perfectly good meat,” Louvish explains in the episode. “It’s about knowing what to look for and respecting the process.”
The episode offers practical demonstrations on identifying fresh carcasses, understanding key indicators like rigor mortis, bloating, eye clarity, and fur condition, and determining whether external factors—such as weather conditions and time of death—affect an animal’s suitability for consumption.
Louvish also shares his preferred tools, including affordable knives and a pulley system for hanging game, and walks viewers through the entire butchering process. The episode touches on the ethical aspects of consuming roadkill, emphasizing zero-waste principles and its role in sustainable food systems.
“So much meat goes to waste simply because of societal taboos,” Wildcraft states. “By reframing our mindset, we can make better use of natural resources that would otherwise be discarded.”
