INGREDIENTS:
Chicken breast: 500 g (1.1 lb)
Lemon juice: 90 g (3.2 oz)
Rosemary: 3 sprigs
Extra virgin olive oil, to taste
Fine salt, to taste
Butter: 40 g (1.4 oz)
All-purpose flour: 20 g (2 1/2 tbsp)
Water: 125 g (1/2 cup)
Lemon zest: 2
Garlic: 1 clove

PROCEDURE:
To prepare lemon chicken strips, cut the chicken breast into thin strips, removing any excess fat. Grate the lemon zest and extract the juice, straining it.
In a pan, heat some oil, infusing it with garlic. Once it's hot, remove the garlic and add the chicken strips. Sear them on high heat, tossing them frequently, and add the rosemary needles. When they are nicely browned, set them aside.
Reduce the heat and, in the same pan, melt the butter. Add the flour and whisk it in, then pour in the water. Also, pour in the lemon juice and let it thicken slightly (less than 1 minute or as needed). Immerse the chicken to enhance the flavor and season with salt.
Stir well and serve the lemon chicken strips while hot.
