Pasta made from mealworms, salad made from crickets and grasshoppers and other sophisticated dishes could be on the menu in many European households in the future - at least if Laetitia Giroud and her boyfriend Julien Foucher have their way. The two founded one of Europe's first insect farms in southern Spain. According to Laetitia, the insects can be eaten by humans without hesitation. What's more, they could be used to cope with the expected food shortage that threatens the earth with further population growth.

More than two billion people worldwide already consume insects, and the trend is rising. Young female entrepreneurs in France and Belgium are already experimenting with the unfamiliar foods and trying to prepare them for the European palate. Laetitia's farm is growing faster than expected and the two founders are already expanding. The not-too-distant future will show whether it is a long-term success.
