Ingredients (makes 12): -100g dried cranberries -1 carrot, grated -50g walnuts -50g pumpkin seeds -dark chocolate and dried raspberries to decorate (optional) Instructions: 1. Blend the cranberries, walnuts, pumpkins seeds and grated carrot in a food processor until they are finely ground. 2. Using a medium sized ice cream scoop for each bite, form the mixture into balls. 3. Drizzle or spoon melted chocolate over each ball and sprinkle some dried raspberries (this step is optional).
